Learn how to make Patole/Patoli at home with Chef Varun Inamdar on Rajshri Food.
Patolya/Patole is an Indian dessert recipe made by stuffing coconut and jaggery mixture inside a turmeric leaf coated with rice flour batter. It is a steamed dessert recipe that tastes best when consumed hot. Do try it at home and share your feedback in the comments below.

Ingredients:
Rice batter
1 cup rice flour
3/4 cup water
1/8 tsp Salt
Filling
1 tbsp ghee
3 cups Grated fresh coconut
1.5 cups grated jaggery
1 tsp elaichi powder
Saffron strands optional
Chopped nuts optional
Turmeric leaf for envelopes
Ghee for smearing

Method of preparation:
For the filling
Cook coconut, jaggery, ghee, almonds, saffron, cardamom powder, mix well and switch off the flame.
Allow the mixture to cool down.
For the Outer Layer:
In a bowl of rice flour add salt, water, mix well and create a lump free paste.
For Patole
Take a turmeric leaf, trim the stock, keep it on a working table and apply ghee on it.
Take a spoonful of batter, spread it over the leaf, place the coconut filling in the center and spread it lightly.
Fold the leaf and place it inside a pre-heated steamer.
Close the lid and steam it for 15-20 minutes on medium flame.
Our Patole is ready to eat.

Varun hamare ghar me bhi ye patole banate he lekin step thoda alag he app ne almond aur ghee dala. lekin me til,khus khus, aur kaju dalti hn.aur sicy bhi banati hn chicken ya meat kheema se.atta to soaked boiled rice ko glender me pissti hn.

Its similar to the odia dish called Enduri Pitha..but we use rice n urad dal batter...and stuff the coconut jaggery mixture...its really tasty..

Yes, you can make it in banana leaves. It can also be made in cones of Jack fruit leaves. But nothing like turmeric leaves. It gives it an amazing flavour and fragrance.

While you were demonstrating it, I visualized the taste of rice modak which is prepared during ganesh chaturthi. Same ingredients. Will try it though. I am curious about the flavor due to the turmeric leaf.
