2-in-1 Patra Dhokla. Presenting the love child of two iconic Indian snacks. I can already hear the whispers of my ancestors questioning why! But this style of dhokla is for our most indecisive days. It’s a spicy, savoury dish which takes inspiration from the upside-down cake. Colocasia rolls are steamed directly into a foamy gram flour batter for an unforgettable Gujarati snack experience. I’ll take you through this unique and delicious recipe one step at a time.
A layer of tamarind-spiced colocasia rolls are baked into spongy dhokla (khaman) batter. A tempering of spices goes on top and this snack is ready to slice and serve.
It's a 2-in-1 way to enjoy the Gujarati snacks Patra and Dhokla.
Steam the batter and the bubbles in the dhokla batter create a light and spongy cake. Douse in tadka, a tempering of spices to finish.
The final dish, Patra Dhokla is mouth watering! One piece is never enough.
Healthy, vegan and gluten free if you use gf baking powder.
