OMG everything looks delicious. The bolillos are now a standard at grocery stores, at least in Texas and Arizona. It’s amazing how we have shaped the products cooked at grocery stores. 10 years ago you could ask for dulce de leche cakes but there were none to be had. Now they are sold everywhere. The power of the consumer!!! Of course I’m going to want to bake my own fresh bolillos!! Thank you!

@@patijinich Question, but is dragonfruit's flavor comparable/similar to any fruits commonly found in America? When it was popping out of its peel, it kind of reminded me of a strawberry so I guess I imagined it to taste like a strawberry. And please let me say, I like your programming. Spent my honeymoon in Guadalajara in 1971. We drove from Tucson AZ to Guadalajara. The best food was always to be found in all the little stands that doted highways & throughout the city.

I spent many summers in Guadalajara back in the 60's and 70's. There was a restaurant chain named Carne's Asada Piopilo. Simple basic meats grilled handmade tortillas..mmmm

Mayo in a torta ahogada? that is sacrilege! the guy is going to hell. Tortas ahogadas are made on birote roll, with a spread of refried beans, carnitas, red onion feathered, and bathed with Yahualica chile de árbol salsa (very hot). No Mayo, no tomato salsa, nothing else.

Thanks for the video Pati, but next time ask people who have lived in Guadalajara all their life, real Tapatios, to get references about the places to get the authentic Torta Ahogada (with no mayo, no cilantro and just one salsa) with frijoles fritos, carnitas, feathered red onion and chile de arbol salsa made with real chile de arbol from Yahualica (which is protected by Denomination Of Origin) they build the torta ahogada spreading frijoles fritos on the inside of the birote, then fill it with carnitas and hold it with tongs and fully DIP it in the deep pot with thick chile de arbol salsa (they drown the torta in the salsa, hence the name of the torta) and lastly the feathered red onion on top, that's it, no mayo, no three salsas, no cilantro. Warning: the real chile de arbol salsa is VERY hot, not all Mexicans can eat it. And about the "chef" in the Mercado, he is a snake-oil salesman; he told you a bunch of lies, and he speaks with a Mexico City accent, not a real Tapatio... What you call "Dragon Fruit" is Pitaya, a very sweet and juicy fruit grown in the towns around the outskirts of Lake Chapala, very close to Guadalajara, and they are only available from the second half of April until the first half of June (once the first rains come the fruit rots in the plant). From a real Tapatio.
