I do it like I do my Potato Bread, (since I don't have a juicer) I use between 250 - 300 g peeled Beetroot, cube them and boil them soft. The I use 150 ml of the Beetroot Water with the Cubes and run them through the Blender. After the blend has cooled down I mix 5g of dried yeast into it and let it activate. That I mix then with 470 g of Flour, 10g salt, 30 g Butter and Sesame Seeds, and knead into a smooth ball. Let it double in size, knock it down and form a loaf or place it into a tin and let rest for another 30 minutes. Cut a Diamond Pattern into it and.... Then I bake it with steam for 20 minutes on Highest Heat on a stone if it is not in a tin, upper and lower, after 20 minutes I turn the temperature down to 200 degrees and bake for another 30 minutes.

@@glynisreynolds446 - You can use actually any Root-vegetable with this recipe or flour. My Girls didn't like to eat Whole Wheat Bread, but when I used Beetroot, Potato's, Sweet Potato's or Carrots they went nuts for it. Sometimes I also put Nuts into the dough to give it a crunch. Sometimes I make them as a Sourdough. Depending how much time I've got on my hands.

Hi there, at what point we r using warm water or any warm liquide to help the yeeast to prove? I tried it but the buns were very dense

@@nausheenashaikh4051 - I mix the yeast directly into the blended warm Beetroot/Water mix. You just have to be careful that it's not to hot before adding the yeast, otherwise it will kill the yeast and then you'll have dense Bread or Rolls. I just stir it, stick my finger in to see how warm or hot it is, and if it's around 27 C, I mix in the yeast. It should bubble in a few minutes. Then just mix it under your Flour and Butter, knead until smooth, rest until doubled in size and then do what you normally would do.

I love this! I've been baking all my own bread since the pandemic began and love trying new types that I'd never find at my bakery. And luckily I even have a juicer that hasn't seen the light of day for years. That beautiful colour is so enticing. Cheers from Canada.

I used to make bread with the leftover brine from fermenting beetroots. The bacteria in the brine ferments it so you don't need to add any yeast or sourdough starter. Just brine + water + flour. (could be brine + beetroot juice + flour, I guess).

I tried working this recipe with Italia flour Tipo 00, it is my first try. I got a moist bread when fresh, but a crispy touch when lightly toasted. Delighted! Thank you, Patrick.

Hi, I live in Israel and tomorrow is independence day, so breads are being made with artificial colors (sad, I know), and last night I had this crazy idea of making red pita bread, I simply had to search for recipes of beet bread. Yes! Just add some starter instead of the yeast. If your starter is hydrated 100% substract half its weight from the total amount of flour, and half from the beetroot juice. Say, you add 100g of starter, ad 50g less flour to the dough... times will be different

If you are using the raw beet juice, you are also keeping the oxalates from the beets. If instead you are using cooked beets that have been pureed discarding the liquid, and adding some Amylase to help break down the starches to make the sugars available for fermentation, then you no longer have the oxalates in the bread. Since the bread is baked, using raw beet juice to keep the vitamins doesn't really make a difference since they are mostly destroyed in the baking process.

You don't have to use this exact juicer for it but you would need a juicer as the hand blender wont extract the juice.

@@ilovecookingireland can I use any blender then try to extract the fibres out to keep the juice alone...guess that might work..No? By the way I'm a big fan, did the sour dough as per your videos and worked great with hand kneading and also the machine

@@jnmina1 A juicer separates the fibre from the rest of the fruit or vegetables. This leaves only the juice for you to drink. A blender processes the whole fruit or vegetable, including the fibre. This makes a thicker liquid which will change the consistency of the bread. I hope this helps.

jnmina1 Blender or food processor, then lay a fine cloth or a few layers of cheesecloth in a strainer, set it over a bowl, add the contents of the blender, and let it drain. That’s how I do it. I hope it works for you.

Hello PAtrick, gained 8 kg with the sourdough lol but everybody loved it. im just making this beetroot recipe and my dough is not watery at all although I did put 300ml of beetroot... any idea? I hope it will work.... will update

Patrick beets taste like dirt? It is a beautiful bread though. I bet carrots juiced would be a little better. They are sweeter..... and maybe some toasted seeds too. Always glad to see you Patrick

I can see it being a compliment to something savory and salty. I will atempt this bread when i start my jurney into soups. Allthough it will have to wait for my stock adventure to be done :)

Question: I've some sourdoughs where I used fresh beetroot juice exactly like this. The bread was baked at 250C BUT the color inside turned brown and didn't stay beet color at all except a ring around the slice. See picture here: photos.google.com/photo/AF1QipMvxa1HhnlVTkSGDYGACPcLaCUl-M6rXgm0MDRE. I went on Google to find out why that happens and it turns out that the color changes at a temperature of about 150C or so. That's why beetroot juice is used on making Vegan burgers. When you buy them they have the beetroot "meat" color, but when heating, they become brown, just like beef meat. So the question is how did Patrick manage to retain the color?? Doesn't make sense to me.

I hate beets, but I'm a big bread eater, & I'm assuming the beet taste is quite minimal, & not as pungent as a cooked beet, so i gotta try it, or is it as pungent, as a boiled beet, with that strong beet taste
