Many thanks for showing how to make the cake without the mixer since I don't have one. I teach my six year old nephew to bake and cook when he visits and we sing a special song as we cream the butter and sugar by hand - making/baking great memories together.

Best way to know if the butter and sugar has been creamed is to get a 1/2 glass of water and put a little bit of butter/sugar mixture in it. If you have creamed it correctly it will be light and float. If its not ready it will be heavy still and sink.

I was always taught to fold the flour carefully into the mixture with a metal spoon, edge on, so as not to loose any air as this keeps the sponge light . Using a wooden spoon is sacrilege.

Jaweria Bibi Cake flour has less gluten and it is ground finer. You can use other flours, but it won't work as well.

Shameem Akhter I had the same problem with other recipes. A Mary berry recipe said 160 degrees for 30 mins but mine was perfect after 18mins at 150 degrees. The only explanation is our ovens temperatures are higher than they say they are. So cook your cakes 10-20 degrees lower than it says and lower time slightly. Good luck.

@2:29 Always trust the recipe? Following the recipe to the exact measurements almost always leads to a sticky, un-workable doughy mess where you need to add a cup or more of flour just to be able to touch it. So why not just add a cup of flour to the damn recipe...?

This recipe when printed makes no sense to me....I quote 4 eggs in shell wt ~ 245g wt eggs in butter 245g ??? wt if eggs in sugar 245g? wt of 3 eggs in sponge flour 185g I am a Chemist used to accurate measurement but I cannot work this out! If 4 eggs ~ 245g how can the addition of butter + sugar have the same weight? and 3 eggs + flour less that 4 eggs? Please help. Do the laws of Physics and Chemistry not apply to baking? Why can't you just give accurate wts based on the wt of the initial 4 eggs ? Am I stupid?

You weigh 4 eggs in their shell - which will give you the weight of the rest of the ingredients. The recipe gives the weight of 4 eggs to be approx 245g. If the weight of your eggs in different then the rest of the ingredients will change accordingly. Butter and sugar = the weight of YOUR 4 eggs Sponge Flour = 3/4 of YOUR eggs Cocoa Powder = 1/4 of YOUR eggs
