My granny always cracked eggs into a saucer first incase it was a bad egg. If you cracked it straight in then all the mixture was ruined. Nowadays it is rare to find a bad egg as they all have the date stamped on them.

I still do it out of fear...rare doesn't mean unheard-of and I've had a friend crack a rotten egg into his batter before and lost the whole batch so I'm willing to wash an extra bowl just in case!

Your temperature is 180, but I usually use a convection oven, which would be 20% less.... are you assuming convection or "normal"? Thank you!

Ingredients checklist 4 free-range eggs 225g/8oz caster sugar 225g/8oz self-raising flour 2 tsp baking powder 225g/8oz baking spread, margarine or soft butter at room temperature, plus a little extra to grease the tins 200g good-quality strawberry or raspberry jam A little icing sugar for dusting the finished cake

This came from fabflour.com. He said he used plain flour so I would too and use 2 tsp baking powder. The baking powder should be left out if using self raising flour.

Thank you, my Victoria Sponge dipped in the middle & think I may be put just a little too much baking powder in & over mixing it. I also used SR flour as I was following a Mary Berry recipe, which are usually great.
