Why would you use plain flour to make a light sponge cake; isn't it only for denser cakes, ie Madeira cake?

So, good bake color, but the layers were uneven. I like to see the jam spread more evenly. And the whip cream should extend to the ends all the way around the cakes. Kudos for sticking to a traditional recipe, but when cooking a traditional recipe, the technical execution must be perfect.

I’m American but my dads side is very English and I really wish I could just move their.... I have so many British tendencies... nobody in america likes jam, cream and sponge with tea! I have such a sweet tooth. Also- I can’t watch too much of him... he’s just too handsome 😅😬

This is probably because I’m American, but that cake looks so DRY. I’m used to frosting all around the cake, and thinner sponge layers. Also the jam - BARF.
