Bob and Paul always remind me of a couple of Hobbits when they're together. Bit of fishing, some silly stories and a chuckle, followed by a very civilized spot of lunch.

Here is Gordon Ramsay's recipe for it, with more details and demonstrations, but the core idea is the exact same one: distributing heat evenly to the eggs by frequently taking the pot away from the cooktop while you keep stirring it. kzbin.info/www/bejne/hoazaIhrq7mAg5I

Can save you some time as well... you don’t even need to whisk them once they are in. Crack the eggs then turn the hob on. Quick mix about to burst the yolks and then just scramble as normal. The whisking isn’t necessary at all.

I was always told to finally add salt to the eggs to finish, as it can draw too much moisture from the eggs while cooking. There’s nothing better than good scrambled eggs 😀
@0ptriX
@0ptriX 2 жыл бұрын
Look for research Kenji Lopez-Alt (and Harold McGee) did on this. Tl;dr - Salting eggs earlier on makes for more tender and moist scrambled egg; although salt does break down the proteins it simultaneously prevents them from getting too close to each other and reduces the risk of water being squeezed out.

I approve of this method. I learned it from a Gordon Ramsay video. Except he said don’t add salt and stuff until the end. And he added some crème fraiche at the end instead of milk at the beginning. But the keys are the stirring and the on/off heat.
