Never in a million years did I think I would ever bake anything from scratch. Now, I'm not only making things for my family, but friends, organizations, everyone. You are truly an inspiration, and I thank you for your informative videos.

For those who are not from the States or not from the south of the States, please try making your preach pies with brown sugar and cinnamon (and a bit of nutmeg and allspice or use pumpkin spice, if you'd like) in the peach filling. It makes it so much more flavorful! Anyway, your pie looked gorgeous!

A splash of orange juice and a dollop of honey is my secret add on! When she used lemon juice i would put the honey and orange juice.

Hi Stephanie, my peach pie is in the oven righ now ^^ and the ice cream is waiting n the freezer ! Since the oven is on,i also made a vegetarian quiche. Both dinner and dessert will be done early today ! Thanks so much!!

I. Love. Peaches. Gorgeous! Thank you, Stephanie, for the very detailed video. These essential tips and techniques will do the peaches justice. It is not summer for me until I've had a peach that's ripe and so juicy that I have to eat it over the kitchen sink. When I first moved here to Cali, I had a hard time finding good peaches. Now I just order from Frog Hollow Farm on SF's East Bay. Their peaches taste like peaches (the schnoz-berries taste like schnoz-berries)! Last time I ordered, I got a Hungarian pastry called "omlos teasutemeny." It's abricot conserve on shortbread, topped with frozen-and-then-grated shortbread dough, then baked. It was _sublime._ The freezing then grating technique makes the shortbread lighter than air.

You're so amazing, I get ridiculously excited when I get a notification saying you've got a new video up!! I was wondering what the difference is between an egg wash and a cream wash was. You're the first person I've watched who does that, or at least that I've noticed. It looks so lovely, I can't wait for more!

You could use an egg wash. Both are used to help with browning.

Was my first time making a pie so I am happy it turned out good. Funny mine came out a different colour compare to yours it was pink like grapefruit. Also don't think I added enough sugar it was a bit sour to the taste but my husband loved it that way. The crust is really good I will always use that recipe for sure. As usual thanks so much for the great tutorial Stephanie :-)

Hi! Great recipe! I will try it! I always find it's easier to take out the first slice of the pie (or cake) if you cut 2 slices and then take out a slice. give it a try and tell me if you see a difference. :)

Hi...is quick cooking tapioca are the same with tapioca starch? And if I use corn starch as the thickening agent, how much do I need to use? And do I need to make a slurry first?

iggyp Song Actually after some google researchs il seems that it was Gooseberry pie. In french it is "tartes aux prunes " (plum pie)

A trick for slicing: If you cut a second slice it will be easier to take out the first one ;)

Wonderful recipe! I added some crushed cardamon seeds (1/2 t easpoon)) and 1/2 lemon zest to the peaches and served the pie with wiped cream. It was delicious!

MrStarnova I always use fresh peaches, but you should be able to use canned peaches. Although if they are packed in sugar, you would probably want to reduce the sugar in the recipe.

My first real from scratch pie! So proud! It’s still in the oven as it needs to brown the bottom! Extra 10 mins. I need to add just a smidge more water! The dough was really “short” to work. My Mum had the same trouble when she baked pie crust. My dough was slow to roll. Just a tad dry. Not dry to the touch but dry to roll. You added another tablespoon! I shoulda ! 🙃

I've never made a peach pie so this will be the encouragement for me to try. Your recipes are always scrumdillyicious! I noticed you didn't cut an "x" on the bottom of the peach before putting it in the water...great to learn I don't have to do that. Question - I love your showing the top recipes, with pictures, for 2013. Do you have a page showing this information for earlier years also. Again, thanks for all you share with us.

Good. Tips for when situational problems come up are rare... Ppl dont get taught how to avoid mistakes. You teach that. That is good 👍

@13:30 for the suggedtion to try sprinkling the bottom crust with something to help absorb moisture and add an additiional flavor element. For example, some ground almonds. Luckily, I have some sliced almonds that I will finely chop up by knife.

I love this pie. Have to use cornstarch cos in Germany I can't get Tapioca. But your Pie Pastry. Amazing. So happy you post a recipe with butter and not with vegetable shortening cos again no chance to get it here 😉. I buy me a pie shell online and it works much better cos the size is different here in Germany 😃😍

Thanks to the post that said try adding cardamom. I did add only about a pinch but it seems to round out the peach flavor. But I felt it still desires a whisper more of some other note. I added the slightest dash of mace and it all seems subtlely classic, like you can taste the fuzz, just kidding. No really, just a mysterious old-fashioned "peachy- pie" taste.

To reduce excess moisture from peach juice, can i leave it to drain for 15 min and then thicken it and put it back over the peaches like you do with the apples?
