Just wanted to say, Pearl, not only is your method of teaching methodical and clear, but your editor does a wonderful job of keeping the essentials and trimming off the non-essentials, in the interest of time, which makes your demonstrations concise. On another note, in the South, Anglo-Indian mothers, who often had to stretch the household budget, to feed many growing children, used to make a preserved meat called Ding-Ding. I’ve eaten it in boarding school. Essentially it’s strips of beef that have been well marinated and then dried out in the sun, to preserve the meat, prior to fridges being affordable. This was neatly stored in a Cream Cracker tin and locked away in the family Meat-Safe. During the Monsoons when I’m told beef was unaffordable, these strips of meat were fried and served with rice and pepper-water, so her children could have protein all year round. If you, or any of your other fans have access to this recipe, I’m wondering if you’d kindly do a demonstration on how to make Ding-Ding. Thanks Pearl

wonderful dish and so well explained could you please increase the audio volume If you use a wooden spoon to stir the meat it would avoid the metal on metal sound

The pepper water you make is quite different from the south. Our maid would make pepper water on a cold winters day, and sometimes we would drink this as a soup before our main course, that will be beef fry with rice and veggies. She was a Tamil lady who cooked our yummy Anglo Indian food. Missing her cooking and brings back memories.
