Great video I love the pickled okra recipe I'm always looking for pointers I'm told I make a great pickled okra but what thing in your video that caught my eye was the Charles Wright pot-bellied okra I would love to get my hands on some of those seeds any suggestions would like to get some of those

I love pickled okra. I didn't know you could dehydrate okra successfully, great to know and will have to try that! BTW, is there a way to tell if okra is woody without cutting into it? I have bought okra before that looked fine but was so woody I couldn't eat it after it was cooked.

Good morning! :-) Pickled okra has gotten so expensive in the stores too, I was glad to be able to make some this year! About woody okra, it is quite frustrating. I have even bought some canned okra that had woody pieces in it. :-( The only way I know if buying okra is to get small pods. That is one of the things I like about Charles Wright's Potbelly Okra, since it snaps off the stalk if it is still tender. I tried making a few pickles with it, though, and it just is not suitable. Let me know if you want some seed and I will send you some. :-) Tina

Have never done this before so I have a question.This does not have to refrigerated correct? How long does it keep? Sending my brother some overseas so do no want it to go bad. Also, does it get slimy?

Hi Tamara, you are a good sister! I hope he will enjoy them :-) The vinegar and processing keep them from getting slimy. These jars must be processed in a boiling water bath for 10 minutes, AND the lids on them must seal after processing in order for them to keep without refrigeration until opened. Any jars that don't seal need to be refrigerated, and after they have been opened they need to be kept in the fridge.
