My mom used to have my grandmother and the sisters-in-law over on a Saturday in the Summer and they would pickle veggies all day long. They would also 'hot pack' for the winter. So many years ago. I was just a little kid then but oh those memories. I'm 73 now and want to thank you for tickling my memory bank. I'm going to do this soon.

I do a lot of pickling, and i highly recommend getting some mustard seed in the mix. Like a teaspoon per jar at least. My veggie medley jars usually have carrots, onions, cucumbers, asparagus, and red bell pepper, as i think they all give a great flaver to each other. I have found a great flavor using less dill, but several sprigs of fresh thyme. I also recommend trying with peppercorns instead of ground pepper, to get the flavor without the grit. Oh, and don't toss out the brine when you've gotten all the veggies eaten. You can mix it with some oil and water, and you've made a flavor filled salad dressing. And, if you ever make pickled beets, and have the ability to get those beets with the stalks still attached, chop those up too (minus the leaves) and fill a jar with the stalks, and pickle those too. They are crispy and crunchy, and so tasty.

Give me a recipe may sound a little better. Do you mind sharing. My wife don't like the onion it's the only thing. I'm an Old Farm Boy and I know how to cook but I never did pickle anything and I prefer water bath to put them on the shelf and give them also as gift can I assume you water bathroom like you would any other water bath boiling water for about 20 minutes call this stuff I'm guessing please let me know I appreciate it

I love all sorts of pickled veggies :) I am from France but I have Armenian background and in Armenia we make them pretty much like that as well :) except we also add a couple of bay leafs with each jars, try it, they give a very nice flavour as well and they are very healthy. We also pickle mushrooms :)

Rachel, I prepared four quarts of these veggies and followed your instructions, and after four days I opened one and ate some of each veggie. They came out perfect and crispy. I did take out the veins and seeds cause my last batch was so hot. I ate them, but it was just to hot. These are delicious, thank you !!!

Our staple pickled veggies are radishes and purple cabbage, but we also pickle beets. The cauliflower pickle you made reminded me of the ones I used to prepare with my dad. Will be making some tomorrow!

@@DanaDeeBee We do a fast pickle with white vinegar and salt or make a pickle in brine. We use it for "use what you have" poke bowls. Cole slaw, soups, rolls, etc. My daughter loves to make chinese dumpling soup and adds the purple cabbage just before serving... Gorgeous collor and delicious crunch.

I made your pickled onions, but I mixed it up a bit by putting julienned carrots. I made some cilantro rice. Then, I layered sliced mojo seasoned chicken, a scoop of beans, diced Avocado and then the pickled onions and carrots. It was soooo good! I think a squeeze of lime juice would have pushed this dish over the top! THANK YOU FOR SHARING! ❤

I make an entire jar of jicama. I cut them into fat match sticks. I love the crunch. I’ve had some folks tell me the vinegar is very strong and that’s easy to fix. Just rinse for a second under running water, just to take the edge off and anyone who doesn’t like that strong vinegar taste will love them.

Rachel your escabeche looks delicious. For health reasons I learned how to make FERMENTED escabeche. It’s so good for your gut health and immune system. And more diabetic friendly with no sugar added.
