I think Gavin does an excellent job of showing how to make cheeses at home, he does a very good job with the dairy science. That is from a person that knows his dairy science since I have over 25 years of manufacturing experience in the dairy field (ice cream)

Looks great Gavin, I just tried my drunken cheese and both were delicious. I soaked one in the Crimson Cabernet and the other in a white muscat. The muscat one formed like a salt crust on it but was fine. The Cabernet one was delicious. Thank you for all your help. Dianne

I googled this style cheese that I just bought from Coles. (Was looking for a sheep or goat cheese as they're A2 casein.) One small bite tasted SO salty I couldn't eat anymore of it. Looked at the back label, Sodium 1,800 mg/100 gms!! My regular cheddar cheese is 651mg/100 gms.

And I’ll never forgive our Italian brothers and sisters for keeping their secret for so long, 🤣🤣🤣. Not only for their cheeses, but pizzas and pasta as well! 🤣🤣. I’m in my mid 60s and was brought up on pommy tucker. What a difference getting a job after school and mixing with those of different roots made, particularly the Italians and Chinese. You could tell it was hard. It sounded like you put a brick down on the cutting board. I have a question. Now, I've been in places that make cheese on a large scale before, and the smell can be quite pungent at times. When you're making cheese at home, is the smell really noticeable, or is it fairly mild because you're only making small batches? I'm looking into getting some cheese making supplies myself and don't want to annoy any of my neighbors, seeing as we all share a common ventilation system, and I live on the bottom floor. Btw, your videos are always great, and I always look forward to the new ones.

I love my pecorino, im eating my favourite right now. You should try their truffle variation, Pecorino Moliterno Monna Lisa. It has a very strong flavour profile, very nutty but creamy.

Dont mean to rain on your parade but this is not pec romano because to make real pec romano the goats milk has to ne sourced from a goat that was herd in either Sardinia Lazio or Tuskany other wise you just have pecarino which means made from goat milk but great job looks like a tasty cheese well done

At the moment my store only sell the stinky, over processed, saturated wedge packaged cheese. I have had better people romono. It was less stinky but more salty. Like with parmersaun the are different grades. They are still real though.

Please don't get me wrong. A wheel of cheese doesn't look attractive. I often buy Pecorino Romano, but visually, I would never buy this one (I'm from Italy). It probably tastes and smells better than it looks.
