East of Lexington NC, in North Carolina specializes in vinegar based pork bbq (chopped or pulled). Eastern NC BBQ is its own subset if American bbq culture. It's also my favorite by far.

North Carolina is vinegar, pepper flakes and brown sugar. South Carolina is mustard based. Memphis yes is dry rub, and Kansas City is BBQ sauce.

So I read an sci-fi old west book once, a notable part of it to me was that the bar keep or shop owner had a massive pig with a peg leg. The reason the pig had a peg leg was that the pig had escaped before he was to be slaughtered, saved a child from some beast and became the towns hero. The shop keep recovered his pig afterwards and couldn’t bear to kill the pig right out because “you eat a hero like that piece by piece.” Make me chuckle every time I see a bottle of peg leg porker.

What followed were three stories about the pig rescuing family members in various acts of death-defying heroism. Someone drowning, farmer stuck under a tractor, and a house afire.

South Carolina bbq is a mustard base sauce. My personal favorite sauce, Sweet Baby Ray's Carolina Gold is based on South Carolina sauce

NC has two vinegar based sauces. with and without tomato. I think it is one of the better sauces for meat because it cuts through the fat.

I am a neophyte whisky drinker but laugh at the tasting descriptions you two get into. It would be fun research to see if you two would agree about what a whiskey tastes like if you were separated.
