Im not an animator so this could be not impressive at all, but something that stands out to me is how when beans get punched they ragdoll to the ground, but the animation of them standing up starts from their ragdoll position and looks fluid and natural. Its most noticeable at the beginning of the Jet Bean fight. So either Jeff animated a "ragdoll" himself and made it look natural, or he actually let them ragdoll and took their end position and made it flow seamlessly into them picking themselves off the ground.

This would be more impressive in a game, where ragdolls are always different because they're simulated in real time with the engine's physics, but in a movie the ragdolls are baked in, so it's just a like you said, he animated from the end position.

I applaud it for being made mostly by one person even though the fact he didn't do spriting shouldn't be undersold because none of the programming, meta elements, and to an extent the music maters without workable sprites. Like others have said though the community is complete cancer and turned an otherwise well made product into a cesspool of degeneracy, just like fnaf.
