I remember finding demon's souls to be the hardest in the series but when I got back to it I actually believe it might be the easiest. There's a lot of options for you to have a pretty overpowered build. What I absolutely love about this game is that it is pretty much the blueprint for EVERYTHING you see in the souls franchise (except for a few original ideas in elden ring and bloodborne). It's also surprisingly a pretty big world.

yeah bloodborne changed ALOT, but it also changed alot that made the series special. The best part of the old games was seeing what crazy thing bosses would have up their sleeve, now its just "yep just another guy to kill, no gimmicks that make the fight fun here" in ds3 or bloodborne.
