I made this cocktail last night. I am a big fan of whisky sours, and your description was accurate; a next level sour! This may be my newest favorite cocktail! I made it with Whyte & Mackay 19y Old Luxury and Ardbeg Uegeadail spritz. I am going to try it with a brighter base like a speyside once I get my hands on some. Thanks for sharing this amazing cocktail, and presenting it in your excellent style.

By the gods you can actually really taste the ginger. I will never look at ginger the same way again. It's just so good. I will need to make a Moscow mule tomorrow with this brilliant ginger syrup. I guess i'm off to buy a juicer because I know for sure that I will be making much more ginger syrup now.

Yeah, you're gonna want a juicer for ginger syrup for sure. Adding a splash (1 tsp to 0.25 oz) of ginger syrup to a Moscow Mule is seriously excellent. That's the way I did it in the video I made about the Moscow Mule and the way I always try to make it at home. Let me know what you think of it when you give it a try. Cheers!

I’ve seen a few variations of this. But this one is exactly as it should be. Flawless. One of the best cocktails ever made in my eyes. Don’t be scared off the peated whisky. My girlfriend hated peated whiskies but she grew to love this cocktail so much she now enjoys the odd laphroaig as well.

I finally made this cocktail and took your advise and pony up for a good juicer. I cannot imagine this drink without the strong bite of ginger. Without that the drink is completely wrong and very unbalanced. Cannot wait to see more videos.

Yeah, the ginger is so key and there's no better recipe for ginger syrup than freshly juiced ginger and sugar dissolved into it. It's super spicy and it cuts through the other ingredients in the drink to not get lost in the shuffle.

I saw to bartenders do exactly what you said! One used the ginger liquor and the other one muddled the ginger in the honey syrup then preceded to add the peaty Scotch in the mix. Now to me that is too much work versus the Ramos Fizz....muddling ginger!!!

fun variation, with tequila, mezcal float. fun to soak the ginger in the smokey part too while youre making the drink to absorb aromatics

Yeah, the Tequila/Mezcal version is great with lime juice instead of lemon and agave instead of honey. That one is called Napoleon's Loss. Be careful when you soak the ginger in the smoky whisky, you don't want to lost the smokiness, as that scent is the whole point of the smoky whisky in the drink. That's the same reason you shouldn't garnish the drink with a lemon twist. Cheers!

Here in Germany, fortunately you can buy pure bottled (usually even organic) ginger juice for around 5 bucks for 200 ml. It really saves you a lot of work and I don't taste any difference, like I would with freshly squeezed citrus juices versus the bottled ones. (You can get it at EDEKA or at DM, for example. So it's very readily available!)

Maybe a bourbon could work for the base if you're in a bind, but the smoky float is a must. Honestly, I'd say try it this way first. That's the baseline. Then you cane monkey with it and see if you like it any better. But really, it's a classic for a reason if you know what I mean.

You can also use 2 tsp. of honey syrup and 2 tsp. of ginger syrup and get very close to this. Since 1/8 oz. is 3/4 tsp.

Garnish isn't the most important thing in the world. Just don't garnish it with a lemon twist. That will ruin the smoky nose of the drink.

Wow! That is the first correct approach (apart from the one from Sam Ross himself here: kzbin.info/www/bejne/h5i6oIqdndWIm5Y) to the idea behind the Penicillin cocktail. Really true to the original in every detail. One of my own top favourites too. Cheers! One thing I always wondered about it (and I think it has some ground) is, if a legit variant can be made with another peated whiskey apart from Scotch? Lets say Irish, and the Conemara to be more precise. It has some really strong peat smokiness on the nose, that might actually fit here.

+Distinguished Spirits Not sure about maltyness - so far I've had only a brief encounter with it, so I too can't remember other than the intense smoke. I believe Sam Ross is quite an experimenter himself, and if we don't call the variant Penicillin, we should be fairly safe. ;)
