Seeing how biology works in TAWOG, its probably going to be like this: Most of the time when 2 different species breeds in tawog, the first child will inherit the look of the mother and the 2nd will look like the father (and maybe repeats). Lets take some examples from the Wattersons family tree; Richard is a rabbit, his dad is a rat, and his mom is a rabbit too. Nicole's parents are both cats, but seemingly different breeds, and she looks like her mother rather than her dad. Now Gumball, he is a blue cat just like Nicole. Anais, who is biologically their 2nd child, is a rabbit like Richard. Now judging from this, Gumball's and Penny's children would probably look like Penny, and if they had a 2nd one it would look like Gumball. As for the kid's genders, its likely unrelated to this pattern and still random like usual.
