Here's a tip: To melt chocolate faster, fill a pan less than halfway with water and boil it. Put the pan with chocolate and butter in the water andbit will melt without it burning.

VirtualLife yeah that's precisely what I meant. It looks closer to chocolate sponge cake.
@Rick___9 жыл бұрын
VirtualLife Yeah that may be true. But perhaps the pan modifies how each individual brownie cooks so maybe it was a bit overcooked as well.

I totally agree. I don't think it's the pan at all. It's the fact he beat the eggs for 10 minutes. If you over beat eggs in brownies they turn cakey. One thing I didn't like about his recipe. All the ingredients were correct but don't beat the eggs!!!! LOL

Those don't look anything like brownies. Brownies are supposed to be dense, moist and chewy. Those looked light, dry and airy, like cake. Fail.

Hey Jack, When baking with dry ingredients and wet ingredients, dry ingredients should be mixed seperately from the wet ingredients. That way, all the dry ingredients are evenly distributed throughout the mixture which helps out with the final product of what your baking.

I used it last night and it worked as advertised. Just if you have an electric oven and you are using a 17 oz brownie mix that calls for 350 degrees it might cook faster than the 30-35 minutes the box says. Test with toothpick to avoid over cooking.

hello! to all who see this, and jack if u do see this, first of all i would post this on ur cooking community, but i don't hav an account, and i still need to make one, but with brownies, when you melt the chocolate and butter, something i think just makes it easier, is to put some water in your sauce pan, and then put a heat proof bowl on top, but so the bowl doesn't touch the water. then put the butter and chocolate in the bowl. i personally think it makes cleaning and moving the stuff easier.

Did the dividers in the brownie pan affect your cooking time for those brownies? Just curious, because I would assume the dividers would cause them to cook more quickly, along with the smaller pan size. Also, is it a non-stick pan? Or did you do something to make the brownies not stick?

@megajake2012 sometimes salt isn't used for taste. It's used to react to other ingredients to make a cake rise or to get a desired effect. Usually I see salt and baking soda together. I think they react with each other.

The critical difference is that brownies are unleavened -- they contain no baking powder or soda. The lack of leavening, and minimal amount of flour, results in a dense, chewy bar.
