I like this guy - he seems friendly, unpretentious and I have great confidence in his expertise. I enjoy videos like this where the recipe isn’t overshadowed by the chef. I’d like to see more of him going through classic recipes - maybe him doing other types of American biscuits that shows where and why alternate types are different.

This is a lot like the recipe of Maya Angelou in her cookbook. The great thing about your video versus the cookbook is that you’re explaining the rhyme and reason behind each ingredient and each step which will make me more conscious and appreciative of what I’m adding and doing for the next time I make this. Like very much and very pleasant. Quick explanation on why you do it your way without going too detailed and even going as far as to show what it will look like if you screw up. Wish more instruction video would show the screw ups too. So if you attempt this and they come out different you will know what steps you messed up on and improve it. For me, its overworking the dough

if you can’t get or don’t have enough buttermilk, you can add a bit of lemon juice to regular milk to use in place of the amount in your recipes

This hack isn’t intended for anything that needs to sit uncooked. It solves the need for buttermilk with its acidity.

@@martinanelliedundas9662 Milk doens't have enough fat to be used in place of buttermilk, with an acid. It curdles - fast. You need to use a cream / sour cream..... Source: Tried exactly what you suggest years ago, and it was absolutely disgusting.

I've never been a fan of biscuits and until a few weeks ago I didn't know why; there's nothing objectively wrong with them, and I like other quick bread products. Then, my brother suggested we have biscuits and gravy for breakfast, and I found a recipe that called for baking soda/powder and yeast both. After eating them, I figured out my problem: I could _taste_ the chemical leavening. I've made that recipe twice since then, using only the yeast, and they are the most tender and delicious biscuits I've ever had. I'll never make biscuits with baking powder again.

You need cold butter for biscuits in order for them to be flaky. Melting the butter means you can't get all those flaky layers he made.
