He worked at a lot of impressive places, like Per Se, Noma, and Batard, each of them being Michelin star restaurants. The foremost being Noma which had been touted as one of the best restaurants in the world for several years.

Recipes are only "needed" for really technical chemistry things like baking perfect cakes or making caramel or something, everything else is just experiencing flavour!

We call it plum sauce in Canada (I believe they call it Plum sauce in Australia as well). As far as I know plum sauce is an actual thing that originated in China but the duck sauce was a North American invention. And now in North America and Australia it’s all become the same as the duck sauce. I wonder what different people call the mystery packs of yellow orange sauce they get with egg rolls in different areas?

Saute the cabbage etc to evaporate some of the moisture. Blanching seems like it would waterlog the veggies so when they fry, steam gets trapped inside and they either bust or they get soggy too quickly. This is def the case when u make OG Vietnamese style egg rolls w rice paper which are a lil more finicky than wheat wrappers.

Growing up in Oregon, our local Chinese restaurants always batter/tempura dipped the egg rolls and fried them. It’s absolute heaven. And red sauce, not duck sauce

You can absolutely use a metal spoon on cast iron. You're supposed to season it yourself, guys; it's okay to occasionally scratch through the seasoning. You're going to replace that seasoning anyway.

A Chinese restaurant I grew up eating at used peanut butter to seal their rolls, the place is known for their rolls! I compare the rest of the US's rolls when I travel and it stands alone on the top of the flavor mountain.

I enjoyed this. I've never blanched the veggies, always quick stir-fried them. I'll try the blanche method. A tip: let the veg/filling sit in a fine strainer for 30 minutes to drain more liquid before rolling.
