Just took mine out of the oven and they are cooling. Can't wait to taste ! While they were rising, I had a problem come up. They were risen almost to the edge of my loaf pans, then they caved in before going into the preheated oven. They are smaller/shorter loaves then expected, but the taste is fantastic ! Didn't toast for my first bite, but would really taste good toasted. So much better then having like a bread toast.... Thank you for sharing !

Try adding a tablespoon of vital wheat gluten (available on amazon) to the flour. Your flour might be a little low on protein - it can vary from season to season and brand to brand AND part of the world to part of the world. :)

Hello from New Hampshire in March 2023! We are in the middle of a major snow storm and I was in the mood to bake. This is a great recipe! I wish I had sprayed my Kitchen Aid mixing bowl and dough hook. Next time. Using the doug hook worked out fine. Did not over tax my standard artisan model, but mine was mfg in 1977 and its a workhorse! Dough rose to the to of the top of the pan nicely. I set the pans on a grow mat ( 70F ). Can't wait to try it with a cup of tea! Thanks for sharing this recipe. ~ Diane

This is the 3rd recipe I've used for English Toasting Bread and it is by far, THE BEST. The other recipes added the yeast into the dry ingredients, which works, but not as well as letting it develop on its own. Also, this dough is much "gloopier' than the others and as Marye says, that is what makes the wonderful nooks and crannies. I had to use closer to 3 C of warm milk to keep the gloop ratio after I added all 4 1/2 C of flour to the mix. Still came out PERFECTLY delicious. I want to try Marye's recipe for Amish Milk bread next!
