Hello Refika! I do a similar recipe with two changes. I use dates instead of figs because I can get better dates at this time of year than dates here in Italy. The other thing I do differently is I flour the meat before heating it. I find this produces more fond on the bottom of the pan and saves me the step of collecting the juice from the meat after browning. One less step and one less bowl and colander to clean!I've tried it both ways and they come out the same.

@@Refika Medjools are the obvious choice for the dates but other dates like Piarom and Deglet Noor also work well. I like the caramel and toffee notes they bring to the stew.

This looks marvellous and I am eager to try it. I have some dried figs, but they are soft and dark and wonderful to eat as they are. I can use them and I have chicken thighs, but no wine. I will have to get some wine & then try it. When I was a very little girl (I am 73 just yesterday), my father often used to bring figs home for us to eat. It was the 1950’s and we were in Vancouver, B.C., Canada. I still remember those dried figs he brought. They were all on a string of twine and they were still sort of soft. Not dried hard, like apricots or something. I loved the rich taste and the texture of the “meat” inside. They were light coloured like the ones you showed. He showed me how to hold the fig by it’s hard tiny stem and chew on the rest of it. I don’t meet many people who have ever eaten figs. I never ate a fresh one, only dried, until a friend of mine grew a tree of them in her yard. (We live in a small town on the southern coast of British Columbia, in Canada, called The Sunshine Coast.) For the first time I had a fig, warm from the sun, fresh off the tree - right there, picked it and ate it. W O W - what a difference in texture. It still had the little crunchy (seeds?) in, but it was so very soft and rich and . . . . . and . . . and . . . . . . . decadent. Amazing fruit!!! She only had a small, young tree and so there were not many (at a time) to eat, but I certainly enjoyed the few I had, from time to time. So, I can imagine how that stew tastes and I am just drooling thinking about it. I will have to make it soon. Thank you for the joy you bring to my days. Must be amazing with the fillet...but it is expensive! Other cuts of beef would probably work just as great with longer cooking time. Did you consider putting the pot in the oven at about 150 or 160 C and cook it longer? Tougher cuts of beef would be just as soft as fillet at the end! I will definitely try it with dried figs! Looks absolutely delicious!🤩👍

Hmm what about a chuck roast? I just bought a 2qt enameled cast iron dutch oven for $20 (black friday sale) and I think this will be my first dinner in it. I like that you can use red wine vinegar as a sub. Much cheaper. This is my kind of meal!

Refika, I took this wonderful recipe (minus the flour) and pressure canned it into 5 pint (500ml) jars. It cooked for 90mins in the pressure canner and wow!!! It was so tender and beautiful. The meat had such wonderful flavour and just fell apart. When I heat it up I just have to add the flour for the gravy and its ready to serve. Takes only a couple minutes. I am so glad to have this recipe on my pantry shelf now for an easy fast meal!!! ❤

@@camouflagejumpsuit I have to say, when I had the dish with the prunes they had their pits in them. For some reason I loved the dish more with the pits than without. I wish I could tell you why, but I have no idea, maybe because the prune became something more than a mushy sweet.

I made this recipe today for my family and it is delicious! Thank you so much for sharing your dishes. I used lamb versus beef only because it was what I had in the freezer. I will have to try it next time with the beef. Also, the figs I found were closer to the round ones and they were not that sweet, so I added a bit of sugar to the recipe and it worked well. I wish I was in Turkey to try the flavors of the original dish. xo

This was absolutely amazing. I managed to get my hands on some turkey figs and I used a decent chuck roast for the beef. Leftovers were excellent 😊

We also have spezzatino di manzo in Italy which is made in a same way although, vegetables may vary. But carrots and potatoes are in for sure. We do not add bell peppers instead add celery, Rosemary, Thime, butter, red wine etc. Thank you dear Refika for the yummy video, ciao!

Looks amazing! Small warning though, many cast iron pans release a lot of iron because of the acidity in tomatoes or wine during the cooking process. Make sure how your is so you don't end up ruining a kilo beef that taste liver at the end.

I made this last night and it was so delicious, I had another bowl for breakfast this morning. This stew hits all the notes and is a perfect combination of savory, sweet and tangy that leaves you wanting more. I wasn't able to find pepper paste at my local market, so I substituted tomato paste and was short 3 bay leaves, but the dish still turned out great. I would definitely make it again. And again. Any recommendations for what type of bread or potato to serve with this stew? I used potatoes last night, but I think a bread might go better?

Hi team! I’m one of those who don’t drink wine or alcohol and I appreciate that you mentioned I can substitute some 4 Tbsp of vinegar. I will also mix a couple Tablespoons of grape molasses to it.I can’t wait to make this recipe for my family. Even though it’s Ramadan and we are fasting I am trying to make meals that are a hit.
