Hünkârbeğendi is a delicious Turkish dish inherited from the palace periods of Ottoman and made it to our days. It’s prepared by making a puree using eggplants and flavoring it with bechamel sauce, then served with meat on top with a mouthwatering sauce. Hünkar Beğendi Recipe
5 eggplants
2 tablespoons butter
2 tablespoons flour
2 cups milk
1 teaspoon salt
Nutmeg, to taste
300 g, sirloin , diced, short loin, top loin or lamb would do good as well
1 onion, diced
4 cloves of garlic, thinly sliced
1 tablespoon butter
1 teaspoon flour
2 medium size tomatoes, peeled & grated, passata, tomato sauce or tomato paste
½ to 3/4 cup of water
Half teaspoon cayenne pepper
1 teaspoon red pepper flakes
1 teaspoon oregano
Salt, to taste
• Prick the eggplants with a knife or fork. Since there is air in the eggplants, they can burst when heated. This step is going to prevent that.
• If using a gas burner, place the eggplants directly over the heat source. You can place them on a rack as well. It will make it easier to turn the eggplants but take a little more time to cook. Cook until eggplants are completely tender and charred, turning occasionally. They will be cooked in around 10 minutes. Check near the stem and bottom ends to see if they are done.
• Place the cooked eggplants in a large bowl and cover them with a plate. Let them sweat for a couple of minutes. This will make it much easier to peel them.
• Meanwhile, to make the sauté, heat the pressure cooker or a pod.
• Add a tablespoon butter and heat until sizzles. Then sear the meat on all sides for two-three minutes until nicely browned.
• After meat turned brown, add the onion and garlic and continue to sauté until softened.
• Add a teaspoon flour to thicken the dish.
• Season with salt and add the tomato puree.
• Add the hot water, cayenne pepper, red pepper flakes and oregano.
• Set the pressure to high.
• Close the lid. When the lid is tight and the pressure is enough to cook, place the pressure cooker on a small burner on low heat.
• Cook for 15 minutes and release the pressure by removing the lid or putting the pan under running cold water.
• If using a regular pod, cook the meat 60-75 minutes until it is tender and gradually add water if needed.
• To make the bechamel sauce, melt 2 tablespoons butter in a pan on medium heat. Once melted, add 2 tablespoons flour, and stir as it cooks for a couple of minutes.
• Gradually add the milk and whisk until you have a slightly thicken sauce. Then add a teaspoon salt and nutmeg.
• Working with one eggplant at a time, use a knife to slit each eggplant and open lengthwise. Scoop out flesh with a spoon. Discard the seeds if there is any.
• Mince the eggplants with a pinch of salt and add to the bechamel sauce.
• Mix well and give it a last heat.
• Place the eggplant bechamel in a large dish.
• Add the stew in the middle of the eggplant sauce. Dig in with your loved ones. You can serve as individual portions as well.

my first introduction to Turkish history and culture was when I went back to college in my 50s. I ended up writing a thesis around the Turkish contributions to the 1893 World Fair, in Chicago. It was nice to move from just politics and Imperialism to Material culture, food, art and especially dance. Since then I have continued to be a lover of your rich culture and history as lived by everyday people, not just famous men. Thank you for your kindness, openness, and support of humans of all kinds. Let's all behave as though we are setting the table for our loved ones and share in the beauty of everyone. I am a better person for having found your channel, because I cannot wait to share food, kindness, and creativity with everyone I encounter.

@@ecenbt there are plenty of actual victims of violence but at this point due to internet misinformation I only believe video evidence. I have seen plenty of it where young women attack innocent older men who are not doing anything wrong. I hope they will be punished accordingly and if you do not agree then that speaks to your character.

Hello Refika ❤️! I just started following all of your Turkish recipes. My grandparents were Ottoman Greeks and I just realized through a DNA test that I am half Turkish (more Turkish than any other ethnicities. I Love to cook & bake. My family came from the Bursa district & Apolloniada, now Golazi. I made this recipe & we just LOVED it!!! I always wanted to visit Turkey, especially the villages my family came from, including Instanbul where my Great Grandfather was Haji Papavasiliou. I have many cousins that converted & stayed in Turkey. Like I said I really want to spend some time in Turkey but I was born in America & I think it would be dangerous & unwelcoming by the Turkish people or Government. I want to learn the Turkish food that I know from my family that Turks & Greeks did live on harmony for centuries. Thank You so much for your delicious meals All my love & kisses G.Anna

Interesting story Anna. And no, it's not dangerous and unwelcoming by Turkish people or Government to visit Turkey, on the contrary, they will welcome you in my point of view. Btw, May is a good month to visit Istanbul, it's not cold any more and not that much hot like in July and August. Book your fly and enjoy your trip to Turkey, you will not regret it.

My mom adds Kashar cheese into the eggplant and beschamel sauce, or you can also add some Parmesan cheese. I think this is one of the best home style Turkish foods. Just incredible!

I was eagerly awaiting this recipe! I first discovered it in a film called Bir tutam baharat (A touch of Spice in English); highly recommend it if you haven't seen it. By the way, in Spain (and probably other countries) we have something similar to that közmatik which could probably work until yours is available; it's a pan that we use to roast chestnuts (known as sartén castañera in Spanish). Welcome back.

One of the bright lights and great joys on dark, rainy, windy and bitterly cold English winter days is trudging down to the supermarket to buy ingredients for exciting new dishes my favourite people on KZbin have introduced me to. Then I go home and put on a jazz record and cook and forget about how awful the weather is and how limited my socialising will be over the next few months. I'm trying to 'hibernate' with flair this winter. Thanks for bringing some excitement and structure into my rather sedentary and, ahem, culturally and aesthetically paused existence. My opportunities for gregarious fun may be cruelly truncated by circumstance but I will expand domestically and gastronomically as triumphant compensation for being a hermit until next April! I ate this a few years ago in Istanbul and it was one of the best things I have eaten. I haven't made it at home but I will try it now after watching your clear instructions. I like the precious cooking tips you give along the way & explaining why you do it a certain way. It’s very useful for novice and seasoned cooks alike. We can forget why we did certain steps & sometimes skip them as we get comfortable cooking & wonder why we didn’t get the best results! 😊🙏

This is a very special dish in Ottoman Cuisine and a must try. It's my go to dish in any casual Turkish restaurant which serves traditional dishes instead of kebab.

I totally support the revolution that the women of Iran are fighting. But I want to give a little perspective here: in the UK, where I live, women are hardly equal, and in the US, where I was born, while great strides are being made, there is also a massive push to roll back rights. So let’s not look at Islam with colonialist pity without putting our own houses in order first. (And for the hyper-defensive, I’m not saying things are equally bad, just that we have a looong row to hoe, too.)

Hi Refika, I made this recipe and it is excellent. We, as Hungarian people from Transylvania have a similar cuisine in many respects. The meat part of the recipe is almost the same as we do it, and we make charcoaled egplant salads all summer, but i never had it with beschamel. I love it even more like this, and in combination with the stew is to dye for. Thanks for these great recipes. Next time I will make lavash and lachmacun.
