My dirty rice is basically the same but i add ground meat along with the pork sausage. I brown the meat and deglaze the skillet with a very small amount of liquid twice in order to add the “dirty” to the rice. However, I cook the raw rice in the meat and vegetable mixture along with 2 cups of chicken broth. I agree with you about the chicken livers.

This meal is definitely a winner. Night one: my kids ate all the rice before I could make the fish. Night two after remaking the rice: the 10 yr old picky eater ate 4 or 5 nuggets. This will def be a staple even though I absolutely hate frying foods (can’t stand the mess I make)

In Louisiana we call this version "rice dressing". Dirty rice down here includes livers and maybe gizzards. Rice dressing doesnt.

I make my dirty rice with Bob Evans hot sausage and chicken livers, but go easy in the livers. If you use to much it will give your rice a grainy, bitter taste.
