Persian / Iranian Zereshk Polow / Barberry Rice

Zereshk Polow is a persian rice. It is made with Raspberry (Zereshk). and usually served with chicken.
Ingredients:
3 cups Basmati rice
1/2 teaspoon Saffron
1 cup Dried Barberries (you can find it from Persian or Afghan grocery shops).
3 tablespoons Butter
2 tablespoons Sugar
4 liters Water
1/2 cup water
3 tablespoons Butter

None of our basmati rice has that long a grain. I have bin wanting to make this dish for 2 decades. I used to eat this as a kid at a iranian family. Best rice i ever ate there. To bad she moved back to iran leaving me clueless on how to exactly make her dish.

I've tried the Persian rice with kebab one time and I notice that the rice has a fragrant taste to it and it is similar to the taste of rose water and I loved it .. do they put rose water along with the saffron in Persian rice?

We don't add rose water to rice. The saffron rice which is used for topping contains cooked rice, butter and saffron only but if the rice is irainian not basmati then it must be auromatic and fluffy.
