My dad was the ACTUAL replacement chef the Gordon Ramsay team hired at this restaurant back when it was still in operation. I still remember meeting Tatiana at that restaurant when I was a kid (after they had filmed and aired the episode of course). It’s honestly surreal seeing Felix do a video on this episode. I’ll ask my dad to see what he remembers and I will share it with you guys. Again, this was years ago lol (edit/update 1) To clarify further, my dad was the replacement for the guy who got fired at 24:08 The chef they talked about finding at 27:54 ended up being my dad (edit/update 2) My dad worked at Charlie’s until they eventually closed 8 months or so after they had filmed the episode (financial reasons I think, the restaurant/chef industry is rough believe it or not). During his time there me, my little brother, and my mom went there and we met Tatiana in person, we went there a few times and she would always talk with us whenever she could, at least until my dad was laid off. The last time we EVER interacted with Tatiana was when my parents sold our old couch to her and that was the last I ever heard about her. She was actually rather friendly and polite in person from what I remember. My dad might still be in contact with her, but I am not sure. (edit/update 3) Thankfully this story has a happy ending, after Charlie's, my dad was able to put his experience there on his resume, which landed him a bunch of other job opportunities. However me and my family eventually grew sick of California, so we moved across the country half a year ago. We now live in New Hampshire, and he's currently working as the executive chef at a super nice seafood restaurant. He loves his job and couldn't ask for anything else :)

A real restaurant owner knows EVERYTHING that goes down in their establishment. The fact that this woman has no answers for anything is astonishing. It is said that 2/3rds of restaurants fail in the first couple of years. Even if you put in all of the appropriate effort, it is an absolutely brutal industry. I have so much respect for those restaurants that have stayed open despite the pandemic, massive inflation, and supply chain shortages.

She just was honest because she wanted to support her family, and the Owner was getting in the way of her making more money. If you know something to be right, that does not make it bad if someone leads by example and you notice that and praise it. Especially in a case like here I meant that waiters are generally treated rudely, by many people, whether that is the right thing and they are to be blamed when the food is bad, remains a disuccion. but he could be a good indicator what is the right answer in that discussion, since he is a person who is generally considered rough and "rudely honest", or by some even just plainly rude, and at the same time, someone who is well known and well educated in that line of buisness. so that would make him the ideal first person to lash out on the staff if they were to be blamed for it, because a) he would know they are to be blamed because of his knowledge and b)his temperament is of those who would not be quiet even if he knew who is to be blamed. sooo, when someone like that behaves this well towards waiters, what gives us the right not to, since most of us dont have that amount of knowledge in that line of buisness. I think many more of the British ones were like that, one I saw was an amazing chef but he was being too fancy and fussy for the area he was in and clientele he had. Took the whole episode for Gordon to get through to him he could do simpler but good food and save time and money and have a successful restaurant. Very interesting

In different European countries there's recipes where you can cook them in a similar way. But they they are served either swimming in soup or covered in sauce. Standalone meatballs, or on top of something (like spaghetti) would be baked/fried in oil. Can't really comment without knowing what the dish was supposed to be in thet restaurant.

The chef was actually making albondigas (Mexican meatballs). They're typically boiled in a tomato sauce, and sometimes they have a bit of hardboiled egg in the center. They're pretty good when cooked correctly, but Swedish meatball still the best.

I was thinking that too!!! I felt really bad for the guy in the video because albondigas are what I think of when I think of a meatball (I'm mexican). He was probably making what he knew best. I know it's an Italian restaurant, so he was doing it wrong for the setting he was in, but I would have defended him if infront of Feliz or Gordan. But I do agree that it was best for him to be let go.

well, the vast majority of those restaurants fail. they just go back to cutting corners and quality drops and it's all the same. i don't remember exact data but it's something like 90% restaurants after kitchen nightmares failed within a few years after the episode.

To be fair, i sympathize with the head chef a bit. He's kinda old and he’s done everything this way his entire life, and then suddenly someone walks in and criticizes every single thing he does (although said criticizm was valid), I mean, it’s kind of impossible not to feel hurt or get defensive. Hi there, I'm half Mexican and the think with casamiro and the meatballs is that the word for meatball in Spanish is albondiga. There's also a dish in Mexico called albondigas. So when she told him Gordon wants him to make meatballs(albondigas) he made the dish which is a soup with meatballs.

I get the precooked pasta and storing it, when I worked at olive garden last year we did something similar. It gets made in batches in a gaint machine that looks like a deep fryer but boils water. It then gets stored on a speed rack and is wrapped and labeled, as needed it gets pulled from the walk in and gets put under the line in a refrigerated section. Each serving is then pulled and put into a small cylinder dipping basket and put into the water to reheat for anywhere from 5 seconds for angel hair and 10 seconds for other pasta's.

The ending made me happy. I thought the owner would insufferable the whole video but that was wholesome. We've all tried something with a passion and failed, it's hurts but when things turn around it's the best. Lessons learned and hopefully kept.

17:00 As someone who’s worked in kitchens, the way it’s usually done is the pasta is pre-cooked until almost done and then pre-heated by being thrown into the pan with the other ingredients (E.g. the tomato sauce and stuff).

I’m rewatching these and looked up the restaurant and what happened the server passed away which is sad it was due to medical reasons.
