A good bouillabaisse is a true labour of love, and this very fine example of the southern French dish by Phil Fanning is one of the best we’ve ever seen. Turbot, salmon and mussels sit alongside poached fennel hearts in the rich soup, which is made by roasting marinated fish trimmings and creating a tomato and fennel fondue. The result is wonderful bowlful of sunny, summery flavours.
You can make certain elements of this dish, such as the fennel and tomato fondue, the croutons and the roasted soup base in advance, so have a good read of the recipe before starting. I made this. What a great simple recipe. Just kidding, probably cost me over $100 for 3 portions, took all afternoon, broke my blender trying to grind the fish bones/head and absolutely bombed my kitchen. Very tasty though.

Love poached fennel ànd Artichokes with a nice bowl of melted butter and garlic use fingers dip a layer or leaf in the melted garlic butter and even use a nice french baguette tear a bit off to dip and lay a piece on tasty stuff

I've never been a fan of salmon in combination with other fish in a soup or stock, the taste is extremely penetrating

Looks good but what's up with cooking the mussels in the oven? That's probably super dry. Just steam them and reduce the liquor for the sauce.

The only failure is salmon! The French who make the best fish soup ever only use white fish, and never use oily fish! I was in France in my younger days and in 22 days I had soup de poison 23 times, my young wife was astounded as she did not eat fish.
