I'm a huge fan of Filipino food. Street food in the Philippines is some of my favourite because a lot of it is so different interesting, and tasty.
As a foreigner in the Philippines...Why go to a Filipino restaurant when you can get delicious Pinoy street food, and be eating Balut, Isaw, and other strange foods? Manila especially is great for this!
Just a few days before getting my Kalinga Tattoo from Whang Od in Buscalan we visited an Igorot village elder to get his permission to visit his ancestors at a hanging coffin site in Sagada. He was smoking a very important type of Igorot food called Etag. Etag is used in ceremonies in this part of the Philippines, I was interested in trying it because the traditional way of preserving it, invited maggots, beatles and all other sorts of insects into the process.
I'm so happy I was able to spend such quality time with Lakay Wa-Ow, try on his ceremonial necklace, and also buy his Etag.
I'm excited to share the second part at Amir's Birthday Party. Stay tuned!
Inspired by the Best ever food review show and their various interesting Filipino travel vlogs about foods like Catching and eating Wild Tamilok in Palawan.... Is this Philippines Strangest or Scariest Food?
Where are my Filipino and Filipina subscribers at!? Would you try this?

Ate an Etag already, it's a salted and smoked pork kept under the sun or hanging. It taste like just smoked ham or bacon but with more nuttyness in it, no putrid taste or whatsoever. However, the Etag featured in this one is one of the more hardcore types. Typically, the Etags you can buy in markets are well kept, handled, and doesn't have maggots. It's just like aged pork :)

I had an etagsilog in Baguio, the one I got was actually pretty funky, it didn't taste like just smoked ham or bacon that you usually get in stores. It depends siguro who made your etag, you might have gotten one made more "sanitised" but etag definitely has a funky aftertaste.

Many Filipino are saying that they're staying in the Philippines but never heard of this food named etag. Well, that's normal because there are more than 7000+ island in the Philippines composed of at least 200+ languages/dialects. Each had it's own culture and traditions so you can't describe the Philippines' culture as a whole because of its diverse culture.

The grandpa is 98 years old? It means he grew up during the American colonial period in the Philippines. He went to school which were staffed with American teachers brought all the way from the US. That explains why many of our elderly in the PH are very fluent in English. My grandparents and my parents did not have much money but they were educated and they required us to speak English at home. That has been a source of friction when i was growing up. But when i reached college, i came to appreciate why they did that and thankful to them. I intend to do that when i will have kids.

Thank you for featuring our IGOROT culture in your channel. However, some of the details regarding the preparation of etag here are missed and I just want to add them to clear all misconceptions the viewers may have. (1) We do COOK THE MEAT before eating it. IT IS NOT EATEN RAW. (2) The MAGGOTS ARE REMOVED during washing before cooking. If not totally removed, they are safe to eat though. They along with the meat are cooked killing all bacteria and parasites that You might be worried about. (3) It is not served as a main course. It is usually mixed with vegetables, soup, or with pinikpikan (chicken). (4) Back in the day, yes, they only prepare pinikpikan after occasions/celebrations as it is only at these certain times that our ancestors have access to meat. Nowadays, as long as you have excess meat, anyone can prepare ETAG. No ritual is required before making some.

I found their political views interesting too. Most older Filipinos didn't like Americans, I guess maybe because they were a former colonial power. They also didn't dislike the Spanish as much as I expected, probably because none of them were alive during their occupation. They also seemed to love Britain and I really couldn't fathom why. Younger generation don't really care though They have a lot of history with many different country's. My girlfriend can speak English, visayan, Tagalog and Spanish. Meanwhile I only speak once language.

A problem with the Philippines is that you really have to go into the deep provinces to find the full culture. I mean my mom who lived in the Philippines for 20+ years knows 0 to none about our mythology and original cultural practices. It's sad to see it slowly fade away especially with my generation mainly going abroad and forgetting Tagalog or our provincial dialects.

Carl Toralba - We were colonized by Spain, American and the Japanese. The Spanish however were never able to fully penetrate the Cordilleras during their 300 year colonial period in the Philippines and thus had very little influence on the Cordilleran people and their way of life. Part of this was likely due to the rugged terrain of the area but also because of the fierce nature of the people, who would not surrender easily to outsiders. It wasn’t until the early 1900’s when the American Episcopal church came into some areas of the Cordilleras and people started to convert to Christianity and get formal education so they learned to speak very fluent English.

The Spaniards had a hard time conquering the Cordillera regions during their reign. However, the Americans were more systematic and offered a more civilized approach -- a win-win for both the settlers and government, if you will. The reason why Cordillerans are very proficient in English is that our elders were educated by the Americans, did businesses with them and befriended them, to say the least. They even set up military bases in different parts of the region as well. So the Americans had more impact in the lives of Cordillerans. So if you were to ask the Igorots what language they could speak, they're ethnic dialect would come first, English would come second, then probably Ilocano and only a few could speak straight Filipino (Tagalog, though it might vary in different areas). And oh, we usually add etag to "pinikpikan" or white or black beans. Man this is making me miss home -- the cold weather and all. Cheers man and thank you!

Papa JuPri Lol! Could you be any more ignorant? The first 15 years of US colonisation were so brutal that the US had already killed more people than the Spanish did over the course of 300 years. President McKinley said that the US could not let the Spanish take back the Philippines because it would be cowardly and letting France and Germany take Philippines would be bad for business. He considered Filipinos incapable of ruling themselves, so he could “educate” and Christianise them, something the Spanish did to many people. 1889 - the US declared war on the Philippines to CHRISTIANISE, CIVILISE and EDUCATE the people. 1899 - 1905 - 1.4 million killed in just 6 years. The US also referred to Filipinos as "brown dogs"

I'm mainly pertaining to my region and not the entire Philippines. Now, if you're pointing out the brutality of the Americans, I didn't even touch that subject. The other parts of thr Philippines might not have fought back well, hence your tirade, but not my people. Here's a reading for you. I'm loving your Philippines series so much, Mike. You set an incredibly high bar with your previous videos, so I don't say this lightly, but these are some of my favorite videos you've ever done. It must have been such an honor to speak with Lakay Wa-Ow and wear his bracelet and necklace, and to get permission to visit his ancestors in the cliffs. Several years ago, I saw a documentary that talked about a fermented fish dish that the Yupik people of Alaska eat, which is basically salmon heads that are buried in the ground for a few weeks before they eat it. After seeing that, Etag doesn't seem that bizarre to me! Always cool to see you try new and interesting foods like that. You only live once, right?

@@fearlessandfarThank you sir for featuring the cutural practice of the indigenous people in northern Philippines. Am too a member of these tribes and very familiar regarding tribal cultural practices. In fact, interpretation of bile of buthchered chicken is a common tribal practice of every IP communities in the Cordillera region. Checking the bile of chicken is one way of seeking positive or negative Omen that can foretell the success or failure of certain plans, journeys, etc. As Chris explained earlier. It is a common belief that tribal elders are the most credible and reliable to interpret the status of the bile. Here is the thing, "If the bile is well exposed outside the liver, it reveals good Omen. But if the bile is hidden inside the liver, it will be a negative sign." This cultural practice is still popularly practiced today, especially, among culture conservatives tribal villages. Just keep on featuring amazing, informative, and educational contents, God bless and keep safe always!

I've eaten etag before, but it was a different one, it was kind of yellowish but it's still pork. Also the pinikpikan the man mentioned, it's a type of cordilleran dish where a whole chicken is feathered and like get the blood out anf chop manually and then it gets cooked with like alot of soup and then get mixed with the etag as a seasoning:^) -new subbie

Well it’s so popular with igorots and maybe kalingas and guess what, it tastes great if you “add” and cook it in any dish. Though, we don’t eat it with the maggots, I wouldn’t dare😂. Too bad there’s no etag here in the us.

Wow! As an Anthropologist, these are stuff we can only dream of experiencing first hand. I studied in Baguio many years ago and never had the privilege of visiting these places and experienced what you've experienced. Thats why I appreciate your videos because you're living the life that I once dreamed of having. Your vlogs are very informative and educational. I know you're going to Butuan soon. I hope you guys can visit the national museum and feature the Balangay.

If you're wondering how the Village Elders are so fluent to English (also Spanish and Japanese) due to our past Colonization from Americans, Japanese and Spaniards, That's why my Grandma who's a non elementary graduate can speak perfect 4 Languages including our own Fact: among all places in the Philippines only Cordillera is hardest to conquer back then, that's why most Traditions in the Cordillera Region is still alive

According to Pioneers, the Anglican missionaries focused in the Upland Areas since time immemorial and English language was the regular means of communication back then. That's why everyone is amazed of their proficiency in English both written or verbally.

I appreciate how you tried etag with no hesitations. I’m an Igorot myself and I’m not sure if I had it once. Lol This is amazing. The Cordilleras is a wonderful place and a hidden gem in the Philippines. Most will only think of Baguio, but there are other provinces outside the city that need to be featured more. It makes me proud. Thank you.
