I spread a small amount of chutney (Indian ones included) on the inside of one of the breads like you do jam but otherwise make it typical (I'm content with cheap by the brick cheddar and Red Leicester), except I use mayonnaise instead of butter for the outside as it seems to be less smokey and has a pleasant taste (butter tastes better though). Don't knock chutney, a little bit of it goes well with any cheese on Scottish oatcakes, better than cheesecake and more convenient if you don't want to buy some especially. Put BBQ sauce or brown sauce, or dare I say ketchup if you hate those on your cheese toastie and you get a similar taste. I can easily imagine kimchi being nice like any English relish or pickle but it's dearer and blander than chutney and not as tart or complex as even the most basic bbq/brown sauces imo.
