I enjoy using my homemade breads for grilled cheese, but it's a mistake to use any cheese that doesn't melt easily. Good ol' American cheese works and if you are terribly averse to Kraft singles, get the "fancy" cheese at the deli counter. A grilled cheese can be elevated by adding gruyere, but it needs that American cheese to get melty. And the bread still needs to be sliced pretty thin, so the heat penetrates to the cheese. Gordon made a nice looking cheese sandwich and I'm sure it tasted pretty good even with not being a grilled cheese sandwich. A harder cheese like what was used here can make a nice grilled cheese though it takes more time for it to melt, particularly as thick as Gordon cut it, so I probably would have suggested (beyond what Chef Brian suggests) is heating the slices by themselves on a griddle or skillet to soften them and start the melting before putting them on the bread. Last time I had a grilled cheese was earlier this year while I was taking care of my mom and on regular white bread she put pepper jelly on cream cheese. I wasn't sure what to think of it beforehand but it made for a very nice, creamy, grilled cheese. My grilled cheese: 1. Sourdough or white bread 2. Spread a thin layer of Big Mac sauce(or something similar) 3. Add Mexican style shredded cheese(Sharp cheddar, Monterey Jack, Asadero, Queso Blanco) 4. Season the cheese with whatever you want, I go with garlic, pepper and chipotle, then 5. Add precooked bacon. 6. Put butter in a pan, butter toast for 3-4 minutes each side 7. When both sides are done add a touch more butter in the pan and sprinkle a nice handful of the Mexican style cheese and let it crisp up on the bottom, then put your grilll cheese on the crisp cheese and voilà

If you are looking to experiment with grilled cheese, try havarti, muenster, gruyere, and aged irish cheddar on sourdough. thank me later. (thin slices of cheese, obviously). muenster and havarti melt surprisingly well, so i usually put them in between super thin slices of the cheddar.

When I make "fancy" grilled cheese I tend to use cheddar, Munster, and some type of swiss. Aside from the cheddar they all tend to melt pretty easy, and if you steam it when grilling the second side the cheddar will melt as well and they tend to be a decent flavor mix.

There was nothing right about this "grilled cheese" sandwich. I prefer to use a combo of munster and colby, which melt super nicely, and I grate it to make sure there's plenty of surface area for it to melt. A dash of cracked pepper mixed in is great, as well. I've been using mayo for years now instead of butter; it really does give it a whole new level of flavor.
@fatterperdurabo420692 жыл бұрын
Mayo instead of butter gives it a gross fishy flavor, I've tried this with many different types and it never compares to butter. People say it makes it crispier, but simply cooking it patiently on a low heat is what makes it crispy without being burnt, with any oil (but butter is the best flavor)
@davidgratton88692 жыл бұрын
I make lots of grilled cheese, and I use several varieties of cheese. However, I much prefer to grate my cheese. It melts better, is easier to combine and distribute on the sandwich. I also put the butter in the skillet first along with a sprinkling of the cheese, then place the sandwich on the butter. It makes a lovely crust.

Fun video. Just wanted to chime in that mayonnaise instead of butter is fantastic. It gives it a bit of a tangy flavor, it makes the bread really crispy on the outside and I find it easier to coat the sides of the bread with compared to butter. A friend taught me that trick years ago and I've never gone back to using butter. Either are great, though.

He also should've sliced his bread much thinner. In fact, there is so much he could've done better in this video, even if he wanted to stick with this list of ingredients. @h3m1v332 жыл бұрын
when i use hard cheeses for grilled cheese, in order to being able to melt it properly, i use a seperate pan. i make it nice and hot, then put the hard cheese slices in it and just a splash of milk. this helps soften up the cheese (you dont wanna melt it in there). the water in the milk will evaporate within 15-20 seconds. in the meantime you can put your breadslices into your other pan with butter. flip the bread, then put the now softer cheese on top. this way you ensure that you can properly melt the hard cheese on top of the bread. anything else im putting in there (depending on my mood) is put on the bread, after the cheese is melted and i take the bread out of the pan.

The more I see of Gordon Ramsey, the more I get the impression he doesn't know what the hell he's doing half the time, especially with things that are supposed to be "simple". Yeah so I do a thing like you described with grilled cheese, butter/mayo both sides of both pieces of bread. Do first side, flip one, load with cheese, put hot side of other down. Then grill bottom, then top. This way all sides of the bread were browned and the whole sandwich has so much more flavor. I also like to hit them with a little salt on the inside after as well as it seems that with mild cheddar or mozzarella based grilled cheeses, they need a bit of salt.

When I make any grilled sandwich, I like to toast the bread first like you said, so the cheese in the middle melts faster, but I don't toast the outside as much once I put the sandwich together. I like the contrasting texture of regular warm bread on the outside, and then when you bite into it you get that awesome crunch. It also helps because a lot of the time when I used to eat grilled cheese, the toasted bread would hurt my mouth.
@letsreallytalk94822 жыл бұрын
That sounds really good, going to try that. I like to put American cheese and just a bit of shredded on top to make it extra cheesy. Tomato Soup is great with it as well. Never thought the average person like us could out cook Gorden on something. If you go to fancy with your grilled cheese, you fucked up. Complicating anything simple never ends well. (And with Gordon adding that extra ingredient that isn’t cheese, would be considered a melt not a grilled cheese anymore….though this wasn’t a melt either, just a toasted sandwich lol)

Best grilled cheese I've ever had was from room service at the Gold Coast in Vegas. Frisco sour dough clarified lobster butter, extra sharp shredded cheddar piled high, a touch of Thai red chili and served with shoestring seasoned fries and a side of apricot preserve. I've tried to duplicate it and no matter how sharp the cheddar, it never has the bite that whichever cheddar the Gold Coast used on their grilled cheese.
