Hi - generally you dont eat the part with the stalk so top part is discarded. But the tail end - its up to you really.I include the tail end of the chili as i think its wasteful to discard it & it is edible. Some people just like their pickled green chilis to look all the same shape & size so they dont pickle the tail ends i suppose.

For Malay, we have the Jeruk Petai (pickled Parkia speciosa).. haha... I don't know what would the non-Asian people think about it if they could taste and smell it... hehehhe

I tried many recipes including yours but all chillies turned out too sourish, not as nice as those I had at hawker centres. What has gone wrong? I did follow the recipe closely, but the outcome tastes terribly sour

I can see adding those chilies and some soy sauce to a nice bowl of Malaysian Oxtail soup or even Malaysian style chicken soup for the winter! Oh I so love the heat!
