***I made this recipe several days ago and after setting in the brine those days the meat is heavenly.***I am making pickled bologna and hot dogs today. We love this on crackers with cheese but it is delicious by itself also. You can use any kind of meat you prefer as long as it is precooked. I know this may not sound appetizing to you but if you get a chance to give it a try you may just like it. Thank you so much for watching. It means a lot.

Making my first batch. I'll repost with results. If they turn out tasting anything like the brine, I'm sure they'll be tasty. Followup: Its been over 2 weeks now and I love them. I did leave out the sugar because I don't like anything sweet pickled. I also left out the red pepper flakes on fear they would be too hot. After eating some, now I believe I should have added for the extra heat. So awesome recipe, reminds me so much of the "Hot Mamma" pickled sausages in the convenience stores. Followup2: I've made my 3rd batch now learning a few things. Adding lots of pepper flakes for the heat I like. I've switch from hot dogs to a combination of the little smokies and cooked Johnsonville Beef Brats. I've learned that poking holes in the meat with a fork or cutting them up speeds up and makes the brine distribute inside the meat more evenly. All I can say is wow, loving the recipe.

J Kintner the sugar must be there for balance it does not make it taste sweet. it is not sweet pickles that would be cups and cups of sugar.

Sounds great! I love trying new recipes too. It helps to see how others have done it. Thank you very much for your updates. The little technique of piercing the hot dogs with a fork is very helpful.

I have made these many times. As well as salt pickles with sugar. There is not enough sugar to make these sweet, instead it enhances the salt and vinegar, in both this recipe and my salt pickles. You would have to use CUPS of sugar in a recipe like this to overpower the salt and vinegar.

Thank you for the recipe I cannot wait to try it.. I never measure anything so it is hard for me to give a recipe accurately but I just about died laughing when you said, that looks like about a teaspoon, that looks about like a tablespoon , then the very next instant you reached right beside you and got measuring spoons and measured the pickling spice! So funny.

Just made this exactly as you said but did 2 cups rice vinegar and 2 cups white. I also threw in two cans of beet juice and put some eggs in. Probably wont be as potent as your batch but they should taste great. I also cut the ends off each hotdog, then cut it down the middle but not all the way in half, like a butterfly shrimp. That way the juice can hit that center hard.

I made a batch of this 10 days ago and I just tried them. I do like the flavor a lot, but I feel that the flavor hasn’t penetrated to the middle yet. I’m guessing that will just take more time? I stabbed all of the little smokies with a fork prior to pouring the liquid over them hoping to get the flavor in there sooner. I will wait until it’s been a month and try another jar. In the meantime I will eat this jar. Next time I will add a little more spice for mine. My mom can’t handle too much heat so this recipe is just perfect for her. Thank you for sharing this recipe, it’s a keeper ❤️

Definitely taking notes on this. My husband also loved pickled eggs and I haven't yet found a brine recipe he likes so this will be good to try. I'll ask him about the meats, that is something I haven't heard of here up north but his folks are from the South so he may be familiar with it and missing it. Edit: I asked hubby and he thinks I'm crazy. He says they are at all the bars and gas stations and you can buy individual packets of them in grocery stores. And yes, he likes them.

Thanks for sharing this, I love your take on it. One of the only good memories from my grandmother was her 'Bruine'. She made it from scratch including part of a pig my family would never use other than for her recipe. While it was cooking we didn't want to go near the kitchen but the end result was divine. Christmas in Australia is usually really hot so we often had cold meats for lunch, bruine was one of our favourites.

smart lady, Gwatney hot dogs are the best! They really are! They have far less salt than the Bar-S garbage and they actually taste so good you find yourself grabbing one out of the fridge during the day and eating them right out of the package and they still taste great even cold! Bar-S on the other hand taste like crap hot or cold!
