Join me as I Pickle some Jalapeño Peppers! How many Pickled Peppers do you think will fit in the jar :)
Recipe for 1 pint jars:
1/2 lb fresh firm jalapeño peppers sliced to preferred thickness.
Pickling Liquid per pint: heat in pot until sugar is dissolved
1/2 c plus 1 tbsp white vinegar, apple cider vinegar or rice vinegar
1/2 c plus 1 tbsp water
1 1/2 tbsp sugar
Add to each pint:
1/2 tsp kosher salt
3/4 tsp whole black peppercorns
1/4 tsp whole cumin seeds
1/4 tsp mustard seed
1 bay leaf
1 whole garlic clove, peeled
Slice peppers and add to jar
Add dry ingredients
Add liquid brine to 1/2" head space
Add lid and band and tighten
Add to hot water bath canner and make sure the water level is 2" above the top of the jar
Bring to a boil and set timer for 12 minutes
Shut off heat and let sit for 5 minutes before removing.
Don't forget to remove the bands and wipe the jars off before labeling and storing for future use!
