Watermelon Red White And Blue Salad
INGREDIENTS
• 3 tablespoons honey
• 1 tablespoon lime juice
• 6 cups cubed watermelon
• 2 cups sliced strawberries
• 1 cup blueberries
• 1/2 cup crumbled feta cheese
• 1/3 cup mint leaves (torn)
• Pinch of salt
PREPARATION STEPS
1. In a large bowl, whisk together honey, and lime juice.
2. Add the watermelon, strawberries and blueberries and toss to coat.
3. Gently stir in the feta cheese, then sprinkle with fresh mint. Season with a pinch of salt, if desired.
4. Refrigerate until serving. Eat within 4 hours for best texture and flavor.
NOTES
Watermelon, strawberries and blueberries are tossed with mint and feta cheese in a honey-lime poppy seed dressing to create this light, refreshing summer salad.
