got some more to try out now. get into a betty crocker cookbook & lookup date bars. make up your filling that way willbe more spreadable. now i gotta try these date bars with phyllo. when i make a batch i make'm extra thick. i double the crust / dough. had a local bakery that made date bars with white sugar instead of brown. sold pieces 2 x 2 x 2. they set the standard. sprinkle white sugar between the layers. the melted sugar causes the glue effect.

Thanks, it was! Date rolls were my favorite -- 100% would make again. Wish I'd added more phyllo layers to the brie, but I got impatient. 😄

Hi Martha! Love this episode--so much good stuff! Do you use fresh shredded potato or thawed frozen? Same with spinach--thawed frozen or fresh and cooked ahead?

Thanks! Thawed from frozen for both. For the spinach, also rolled and gently squished in several layers of paper towel (or one real towel) to get as much moisture out as possible. You could totally use cooked from fresh, as long as it's dried as described above.

Yeah sorry about that; I really just freeformed that one. My goals were just to make sure the spinach was really dry, to cram as much feta in as possible, and barely enough olive oil to lube it all up.

Here is your recipe for spanakopita: chop spinach, toss with crumbled feta cheese. Stuff into pie pan. Cook.

The lazy way 😂 They were either frozen or the refrigerated “Simply Potatoes” hash browns, but they definitely came from a bag.

Loving the pie iron chef series! So does the iron got just to the side of the flames? Like in the coals area? How long does it typically take to cook something? Also where did you find the pie iron? We have gluten free peeps in my family so it’s been interesting to watch and think of different things to try!

Typically, indirect heat is called for. Otherwise you get burned on the outside / cold in the middle. Most things take maybe 10-15 minutes. I’ve had mine for about 15 years now and probably originated at Walmart or Target. 😄 These days you can also find them on Amazon. amzn.to/3Pxtbrj

Also in lieu of a bready exterior, shredded potatoes can work, though they’re a little trickier to work with. If not crispy, they can stick. A few whacks on the firepit will release most stuck foods. 😂
