Bagna cauda is a fondue that includes salted sardines, olive oil and garlic.
In the most modern version, garlic is dipped in milk for a milder flavor.
To make this recipe vegan, you can replace sardines or anchovies with algae of your choice; you can also replace water with plant milk.
It’s a convivial dish and this sauce should be placed in the middle of the table still very hot.
Bagna cauda has been passed down through generations in Italy.
