In this Veganuary episode my Mum will show you how to make Trinidadian Pelau in her very own style. Pelau can be made in many ways - my least favourite makes use of carrots, and my favourite it by far my Mum's. If you give this easy Trinidad recipe a try, we'd love to know! INGREDIENTS:
2 cups of parboiled rice
3 cans of pigeon peas
1.5 cups of dried soya chunks
3 spring onions
4 cloves garlic
1 medium onion diced
1 medium tomato diced
2-3 pimento peppers
1 Scotch bonnet pepper (optional)
Browning Gravy/Sauce
Handful of fresh thyme
Salt and pepper to taste
Water
