Here’s a question for you: does the enzyme break the Collagen into the peptides, as the collagen peptides that one can buy, or does it break them into individual amino acids? Would love to know!

They said it breaks them into smaller proteins so it doesn't break them into individual amino acids, of course I stand to be corrected.

its a great experiment, i want it to use it for my students now in the quarantine, do you think you could measure the protease activity by calculating the cm of the gelatine digested vs the minutes they take to be digested or something like that?? or is it take longer than minutes to observe the proteolysis? and maybe using different concentration of grenetin (Sustrate)?
@flothoejmand84526 жыл бұрын
it would have been interesting to see if stomach acid will also denature bromelain Oo this would provide valuable information, as to how effective pineapple would be as a aid in digestion. from this experiment, we can conclude that adding pineapple to proteins BEFORE eating them would make them more manageable. but if we ate pineapple with a meal - would it still be active ?: )
@travis51254 жыл бұрын
It doesn't. Bromelain has even been shown, perhaps surprisingly, to be adsorbed into the bloodstream intact upon oral supplementation while retaining enzymatic potency (Castell, 1997). This initially may seem improbable, yet it does makes sense when considering pepsin - an endogenous proteolytic enzyme secreted into the stomach which must remain active in acidic pH. Bromelain in similar to pepsin & trypsin in that it's likewise a proteolytic enzyme stable at low pH. As such, it could be reasonable to suppose that it would have a secondary & tertiary structures inherently resistant to proteolysis by other molecules of bromelain and other proteolytic enzymes by extension. If this were not the case, the proteolytic enzymes would quickly destroy eachother thereby obviating their very purpose. Obviously this does not occur, however, as bromelain digests gelatin in preference to itself. The natural function of bromelain appears to be twofold: It seems to be an evolutionary remnant of related bromelaids which digest trapped insects inside their leaf rosette, yet it could also break down leaves and insects on the ground thereby releasing amino acids for root uptake.
