3 AM in the morning and this video has my mouth watering. I had some donner kebab 50 years ago in amsterdam in a little shop run by some middle eastern looking folk and it was amazing. What really set it off was the fresh baked soft pita bread. First time i had had it and i have never had pita bread as soft and fresh baked like that one. It seemed a little thicker than the pita in the video. I definitely have to learn to make pita bread and donner. Thank you for the video!

I just made two batches of this. One with the true recipe here, shown, and the other batch I put 10g of mint leaves and 1 tsp of Shwarma seasoning on top of what your recipe called for. What a wonderfully produced video. I have seen others make this, and they made it so complicated, or try to make it look complicated. But this was straightforward, and the flavours were very close to what our Lebanese friends would make. I did add the mint leaves to the mix and it helped brighten and give it that little something that you can't put your finger on, and the shwarma I could have just used 1/2 tsp instead, but it still didn't overpower it, just gave it a bit more earthy flavours. Great job!!

That only works for certain ingredients in different climates. I live in the MidWest USA in the Mississippi River valley, we have fair to high humidity year round so our dry ingredients are not as dry as others. I bake a lot of bread ( no machines, all hand work, otherwise where’s the fun?) and I always had problems with English baking as it was all in weight not volume. What works for some isn’t best for all. Just saying.

Quick, easy and very tasty. The Mrs and three teenagers loved it and we all agreed, it's better than the shops. 500g of lamb mince for £3 (Lidl) and £1 of salad just saved me £15 compared to the takeaway. Brilliant job john.👍🏻

Best video ever on this. I tried it and it was better than 90% of kebab places I have been to. It also tastes more healthy. Is suspect it has less fat and avoids the preservatives and other gloop they add at the doner factories. Other things I might add as garnishes are fresh chopped mint and lemon juice. Well done on recipe.

Delicious!!! finished my second helpings and my offspring ate it so fast, I only got to sit down with one of them for half the meal! I used fresh coriander chopped with the parsley and a bit of mint. (Forgot to get powdered coriander) and gluten free flour instead of bread.

This is very similar to a method I use, only in my method I take some of the fat that has rendered out of the meat while in the oven get it hot in a frying pan and then flash fry the thin sliced meat. This produces the lovely caramelisation you get when it's cooked on the rotisserie at the shop.

I made this last week in exactly the same way as you and exactly the same ingredients from exactly the same shop, every little helps. Cooked mine for about 1.5 hours and internal meat temp' was 93.7. I un-wrapped it and slightly charred the outside with a Gazburner blow torch and it was 100% bang on, complete perfection and many thanks, only recipe i'll use.

This looks so delicious! I've never had lamb yet I'm tempted to try this. third time I`ve made this BUT-this time from Quorn mince so my wife could share, the consistency was incredible, like plastacine AND, virtually none of the mixture stuck to the food processor, I shape mine to a thin slab/brick shape & cut it from the narrow end in slithers so thin I couldn`t believe it, sure it`s a wee bit different from Johns & not as much like the real thing but, it tastes just fine (and my wife`s on her second wrap as I type) thankyou John Kirkwood, saved me a ruddy fortune AND brownie points with my family, result!

All the spices are there in the original, you shouldn't need any others. A couple of vegetable stock cubes crumbled into the mix would enhance the flavours if you don't mind a little MSG.

I have a Magimix almost exactly the same, the 4200XL. And I use it the same way you do. I don't think I've ever used the 'On' or 'Off' buttons! 😂👍

Excellent do-at-home doner recipe. The recipe that I have followed for years is almost identical to yours, with these exceptions: (1) I use Panko crumbs (50g) instead of the bread and egg. (2) To the spices, I add 4g cumin and 2g cinnamon. (3) I add 100g streaky bacon to the meat. It doesn't make it taste bacon-y, but adds a nice amount of fat to further marinate the meat as it cooks. Sometimes I roll the meat up in foil to make a log and use the rotisserie in my small oven (put a pan under it catch the drips), and at other times I do it the way you describe. The rotisserie version is slightly better I think, but more work. Thanks for posting the recipe, John. Can't have this doner without your excellent pita bread!

As with a lot of John's recipes, we've actually cooked this kebab meat. It was very tasty and pretty close to the taste of a chippy doner. If you like doners and can't buy a good one where you live I would recommend trying this......actually even if you do live near a kebab shop, still try this recipe. Cheers John 👍

Well we had the homemade pita bread for dinner tonight and all I can say is wow fantastic as you said John taste better than anything mass produced. Have now got a shower cap to cover dough in bowl for proving instead of using cling film much easier an environmentaly friendly so thanks again for our family having a great dinner

Love this recipe, on my third batch, i live out in the countryside miles from nearest takeaway, i slice it and freeze it in batches now i have a Kebab whenever i want and i know exactly what has gone into it. thumbs up.

....Oh my. Though this only has one "N" in its name, I don't think it would go over very well in the U.S.. This sounds a lot like gyro meat. I will attempt to make it though ground lamb is very hard to get ahold of where I live. Thanks for a wonderfully well done video.

Gyro meat is the Greek equivalent of the original Turkish Lamb Doner Kebab. The Greek version uses pork or beef. Here in the UK there are plenty of Doner Kebab shops. It's a popular fast food, like Fish & Chips.

Only trouble is when your staggering down the road after 10 pints id probably skip the tesco extra and end up in abu's salmonella infested, 1 star hygiene rated kebab house... Ha... What you made here reminds me of what we in America call Gyros which is served in pita bread cut in half to make a pocket topped with a mixture of sour cream & grated cucumber. Yours is just as appetizing. yum

In Canada its Donair white sauce is garlic evaporated milk vinegar sugar Meat very spicy and rolled very very tight in foil Slow cook 3 hours around 325 degrees F

If you make this. Pack it down in them Chinese chipshop plastic containers, freeze it, slice it from frozen/slightly defrosted with a sharp knife/cleaver (it will curl on cutting, but flatten in the pan) and pan fry to get that maillard reaction on the meat.
