Hi! I'm Harry Soo, a Grand Champion pitmaster from in Diamond Bar, near Los Angeles. Welcome to my vlogs, BBQ product reviews, travel & lifestyle videos, BBQ contests, classes, as well as interviews and stories.
On weekdays, I'm an IT nerd living a Dilbertesque existence in a fabric covered cubicle in downtown LA. I'm the head tour guide for a team of IT project managers who build datacenters, networks, servers, and infrastructure that helps bring tap water to 300 cities and 20 million residents in SoCal.
On weekends, I come alive as a pitmaster, competitor, and BBQ instructor. You've seen me on BBQ Pitmasters, Food Network, Chopped Grill Masters, Smoked, Cutthroat Kitchen, and local TV in California. My shtick is I've used a humble 18-inch Weber Smokey Mountain smoker to win 100+ first places and 1st place USA in the Kansas City BBQ Society (KCBS) awards including best chicken, brisket, and sirloin; and I've won over 30 Grand Championships. I've personally taught 250+ classes and trained 4,000+ pitmasters in small hands-on dozen student classes in the US, Sydney, Perth, London, Kuala Lumpur, Ireland, Germany, Mexico, Canada, and Hawaii.
I get many questions weekly about how to grill and barbecue. Since I started cooking professionally in 2008, I've answered thousands via email, so I decided to post my answers via video to reach a wider audience. I'll do my best to post a video on my channel periodically. I upload vlogs, BBQ product reviews, travel & lifestyle videos, BBQ contests, classes, as well as interviews and stories.

I love mine. Found it in an old barn, ordered new grids and it works like brand new. The factoryy told me it was from the 70s. It is my go to grill now.

Why all the haters on such a nice grill? This is the last charcoal grill you’ll ever buy. There are some old PK grills from the 50’s and 60’s STILL being used. Yes they cost more than a $50 Aussie, but Ive personally been through 4 cheap grills this far. Wish I bought a PK years ago. Great video and great review.

Just got mine and can't wait to use it! Super minor, but PK designed the hinged grill surface so you can add fuel on longer "low & slow" cooks. Fuel is designed to be on the right side under the liftable grill surface, food on the left. Thanks for the review!

Nice video. I love PK grills and have several of them. I also bought that stand for my classic PK when it first came out and it works well. While I like Weber Kettles and own several, they do not have the temp control or the minimal fuel usage that the PK grill does. The vent system of the PK is superior for smoking. I agree they are expensive but the cost is worth it to me. I would have a PK over a Weber Kettle every day.

Awesome to meet and hang with you at our 10-KZbinr kumbaya last Fri at T-Roy's place in Austin, TX. I subscribed to your channel and wish you all the best. If you need anything, don't hesitate to ask (harsoo@yahoo.com). I think T-Roy was already tired when I dragged him to Franklin on Sat at 7 am to sit in 32F rain and cold until Aaron opened at 11 am. We ordered food enough for a small army and had a wonderful time including a tour by Pitmaster Max of Aaron's 5 ginormous wood burning pits. Learned a few stick burner secrets also. Thanks for this vid on the PK grill. I was looking at them and watched Malcolm Reed from "how to bbq right" cook on the same unit. Malcolm said it is the grill for purfect steaks .

The PK is standard issue on the SCA competition steak circuit because it works. It's also an awesome home grill/smokers. Try it and you will see for yourself.

Thanks Harry I have been looking at the PKs for while. I decided I would be using it to grill and fry for the family. In competition steak cooking this is the standard with the after market grates. Thanks Again Harry I appreciate the honest evaluation.

Absolutely love my PK Classic. Especially for smoking. It really nails it with the convection air flow. Using much less fuel than my Weber. I bought mine at a local online auction company. It was new in box. People must not have known how much they cost, because I won the auction $120.00. I stole it practically!

NNIIIIICEEE, i helped some people clean around their house and they gave me an original pk classic because they got a bigger smoker and I am so glad they gave it to me because i didnt know how much it cost either

Hmmm. I’d love to hear more about smoking on the PK. I think of it as one of the best charcoal grilling vessels, but not as a smoker. But I love to smoke foods, especially fish. So I’m curious to hear more.

I went and looked at the PK 360 today. It appears to address all the shortcomings that this TX version displays. Exceptional quality grill, and for the money I think the 360 is the way to go. I’m seriously considering purchasing. Thanks Harry.

I just bought one strictly for getting into SCA comps. I will use it at home too of course. But they are running a deal right now where you get the tailgate stand for free. I plan on using it like that on a fold out table with a sheet pan underneath it to catch the ashes and stuff. They can't be beat for SCA cookers.

I have my dad's PK grill that he bought in the 50's. He used to shovel snow to grill when we lived in upstate NY. I just had to buy new wheels for it. I think the heat and cold of sitting out for over 60 years, they just became brittle. Over the years we have made beef, pork, chicken and fish in roasts, patties,. I couldn't even begin to guess how many hamburgers, hot dogs, brats , vegetables (even corn on the cob) have been cooked on this grill. I have even baked pies on it! You won't be diasppointed in purchasing one of these. It has grilled in NY, Canada, Kansas, Missouri and now back to Kansas.

Excellent video Harry. I picked up an old used PK Original, its a little beat up but I wont mind drilling a hole to add a thermometer. Do you suggest put the thermometer at center or off to the side a bit on the cool zone top capsule? Thanks.

Great video. Ive been looking for a portable grill just like this. We have a 15+ annual family beach day that we do yearly. And the beach that we go to that has a open grill that i hate cooking on. I end up using 2 bags of coals, and cooking always takes longer. This grill is perfect for this occasion. Thank you for posting this. Also i just ate breakfast and im hungry all over again hahaha. Meat looks awesome.

Hey Harry, I just bought the same PK TX as shown in this video. I noticed a gap between the top and bottom where smoke could leak from the grill, and of course where air could enter the cooking chamber. I was wondering if you've noticed this?

Mine fits perfectly as I mentioned in my video. Seems they took extra care to mate the top and bottom clam shells for a smooth seam and finish.

What type of charcoal briquettes are you using, ? Could you add wood chunks to it, for more smoke.

I used Kingford Blue but any charcoal is fine. Yes, you can add wood chunks for smoke.

I agree with you, simple but efficient design. I use the bottom shelf on the regular stand to hold a full pan to catch ash. I wire tied GrillGrates to the top rack for a dedicated steak cooking beast. To me that's the niche of the PK, but it can be a smoker as you noted. Very easy to travel with do to weight. Cost is a drawback for the PK as I think they've proved themselves out of most consumer groups. That said I love mine for what I use it for. Side note, aluminum wont rust.

Not to mention that it's super cool to have an aluminum device in your grill portfolio. And it will likely outlast you and be a heirloom to hand to your kids to continue using.

@@SlapYoDaddyBBQ very true. Bought both boys their own Weber Kettles for their first setup. I'll sleep better when they come to visit now. No nightmares of my smokers or Grills finding new "temporary" homes. Lol. Seriously though Grill grates on a PK make one heck of a steak cooking machine.

Estimated that you started with about 40-50 unburned charcoal and about 25 lit charcoal to get your desired temp. Am I accurate? If not, please advise. Thanks and congratulations on the PK. I have a PK Original and a PK 360.

No oil for burn in. All vents top and bottom are open to reach high heat

Nostalgia time. I had a PK back in the 1960-70 era and it worked great then. The vents were circular. It had an upper rack, IIRC for corn. Glad to see they are still making a fine product. I couldn't afford to move it from Hawaii to Houston, so a real loss.

Didn't pk grills used to have knobs that you twist for the lower vents? Or is that a different model? The ash system sure leaves alot to be desired. It could be dangerous on a windy day or cooking on a wood deck...

That is the PK360 high end model. I have the basic model that goes back to 1950's design. Oldie classic version.

Thanks Harry. I’ve always wanted one of the but too expensive for being so specialized. I would also think they would have some kind of remedy for the ash collection. Could be a bit messy in a breeze. Looks top notch quality tho. Good vid.

Life is short I remind myself so I try to buy shiny objects now and then, as I know I can't take it with me when I'm gone just like you never see a U-Haul following a hearse. Enjoy life when you are alive so my mantra so buy what you want sometimes, and not always what-you-need! :-)

Very good demo Harry! Do you happen to know the price point on this grill? I've been using a WK grill for many years. How would you compare this to the classic Weber Kettle grill?

I think the PK has a hole for temperature gauge at one end but no gauge included. But maybe one could insert a temperature probe in stated hole?

I noticed you're using briquettes. I thought you preferred lump coal. I can't find a video from you with the difference in lump coal vs. Briquettes. Do you have one or can you do one?

Hey Randy, use the fuel that you like for the flavor, burn temp, and cost. I use both and like both for different reasons. I guess I'll have to make a video to explain the differences and pro and cons

I have a Lang reverse stick smoker. I use split logs "sticks", briquettes, and lump charcoal .Ive found the briquettes last longer, the lump burns hotter and quicker and the sticks need to be barkless when you put them in firebox. Bark causes too much smoke and not enough heat. Then I throw a couple chunks of pecan or apple or oak on when smoke goes clear for first 50 minutes only.

Wow that's nice airflow control with enough space and portability for families or competitions. 30 seconds with smoothing file should fix where the casting seam was catching on the hinge. Wonder if a disposable pan could be fitted right on to the frame where the ash falls.

So on a kind of related subject. I bought a grill from a friend and found out that he used lighter fluid. To bad I found it out after the 1st cook I did with it. Can you get that lighter fluid taste out of a grill or should I just sell it off?

Run it to 400F so you burn off the lighter fluid flash-point which is about 350F

I use lighter fluid (recommended) to start my Pit Barrel Cooker. Have never had any taste, smell, or residual lighter fluid problems. As Harry stated, do a couple of burns without food and you should have no problems.

@@tomevans5458 If you use lighter fluid, the pit temp needs to be high enough to evaporate the VOC (volatile organic compounds) in the lighter fluid before you put your meat on. So if you're like me who likes to load meat as soon as the lit coals are dumped in to the center of the Minion method, there is risk of having the same problem that Lee Ann had in Pitmater Season 1 where her ribs tasted like lighter fluid in the season finale! Be careful! :-)

I reckon about 4-5 fingers away. I've seen how SCA champions use their PK to create different temps from 250F to 626F using the PK so I know it is a versatile grill/smoker.

I love my PK original, I got lucky and got one for $50! brand new in the box in an online returns auction, so versatile and efficient even in our Canadian winters, done whole brisket, ribs, pork shoulders, and great for reverse sear on steaks, I feed my Inkbird thermometer wires through the bottom closed vent to manage my temps and works awesome...

@@SlapYoDaddyBBQ lol - if we only cooked at above 50F, our bbq season would be short, and we'd miss it, just did a pork shoulder on the weekend at around 15-18F, which is mild for us this time of year.... I'm amazed how well, for a non-insulated Cooker, the PK holds temps in our winter and how little fuel I use on these cooks, amazing... Followed you for awhile, thanks for the reply!

I see Harry has a link to the Green Mountain Grills. I bought my GMG about 6 years ago and have never had any trouble with the grill or having customer service answer my questions. The custom butcher shop in Boise where I bought mine said he switched selling to GMG from Traeger because he nor his customers could get any customer service from Traeger. A local farm/ranch supply chain was also selling Traeger and went to GMG for the same reason.

I have friends that have traeger pellet grills. Their biggest complaint is theres hardly no smoke flavor. We did a competition with pork sholders ,same rub &cooking times. My Large Green Egg won. Traegers are ok if you dont want to "work the grill".

@@ddmau7995 I agree about the lack of smoke flavor being weak compared to a dedicated smoker, but it does have it's place in my collection. I was very disappointed until I'd had it long enough to learn the best way to use it. I've had my GMG for 9 years that I use a lot. It's been reliable and fixed a few times (I jammed the auger as the rain got into the pit and "melted" the pellets still in the auger, the heating element was replaced twice). Their customer services is top notch ( via Paul Pekingham at californiapelletgrills.com/) and they keep my GMG going which I use to teach classes and shoot videos. Those grills really do last a lifetime. But I agree with all the comments about that messy ash "system". Also, I've never liked how the cooking grate is flush with the edge of the bottom casting. Seems an errant push of a spatula would send your food sliding to the floor. Or into the pile of ash. LOL. 🔥

We always just keep a bucket under it and push the ash thru the vents at the bottom. I use a kitty litter bucket with a lid, then throw it away when it’s fulll. I don’t have a cay so I get them from friends wh have them.

Yes, as I mentioned, I lost a friend who was frugal and always bought what he needed and not what he wanted. If it don't broke-the-bank, have fun in life and buy shiny things now-and-then. I know I'm going to love my PK, and when I'm done and gone, it'll still be around for my kids to remember the steaks that I cooked for them.

its a well made product. aluminum is actually pretty expensive when there is a product made with real weight plus all the finishing that goes along with it. its a good product and you get value for the quality that it provides. if you you use your grill multiple times a week, like myself, it is a fantastic bang for your buck over the cheapo grills that are all over the market.

Good question. Not tried a brisket on the PK as it's more for smaller cuts under 5 lb. I've done a 27.4 lb brisket on my WSM18

Can you go more in depth about the vents ? Also you never mention ambient temps when you are cooking. Please let us know because this is a variable other people deal with ona regular that most bbq never talk about. How would this handle freezing temps ? Coal usage v lump hardwood in comparison.

Hey Tom, are you an engineer by trade? LOL! Yes, if it's cold outside, you'll need more fuel and it burns up the fuel faster. If you're cooking in SoCal in the summer and it's 110F, you may not need too many briquettes. If it's -70F and you're in Chicago, best to stay indoors! I'll do a separate video on type of fuel, pros and cons, and optimum applications for various meats and cooks. Stay tuned. Another thing Harry, in regards to washing your meat; if you are someone who prefers to wash their meat because for whatever reason maybe that's how you were taught by your mom or whatever, is it possible to wash your brisket in the sink then when finished you can either pour bleach or AJAX to disinfect it afterwards?

I think the problem is the splash when washing your meat. Not necessarily the sink itself. It's everything else around it that gets contaminated. The problem is you can't see it to know to wash it. However, I've worked in a slaughterhouse and I recommend washing your meat. Absolutely.

The pivotal study in this area was entitled “The Effectiveness of Hygiene Procedures for Prevention of Cross-Contamination from Chicken Carcasses in the Domestic Kitchen.” Researchers went into five dozen homes, gave each family a chicken, and asked them to cook it. I expected to read that they inoculated the carcass with a specific number of bacteria to ensure everyone got a contaminated bird, but no. They realized that fecal contamination of chicken carcasses was so common that they just went to the store and bought any random chicken. After the participants were done cooking it, there was bacteria from chicken feces (Salmonella and Campylobacter-both serious human pathogens) all over the kitchen-on the cutting board, the utensils, on their hands, on the fridge handle, on the cupboard, the oven handle doorknob. Obviously people don’t know what proper handling and disinfection protocols entail. So the researchers took another group of people and gave them specific instructions. After they cooked the chicken they had to wash everything with hot water and detergent. They were told specifically to wash the cutting board, knobs on the sink, the faucet, the fridge, the doorknobs-everything. And the researchers still found pathogenic fecal bacteria all over. Fine. Last group. This time they were going to insist that people bleach everything. The dishcloth used to wipe up was to be immersed in bleach disinfectant. Then they sprayed the bleach on all kitchen surfaces and let it sit there for 5 minutes. And… they still found Campylobacter and Salmonella on some utensils, a dishcloth, the counter around the sink, and the cupboard. Definitely better, but unless our kitchen is like some biohazard lab, the only way to guarantee we’re not going to leave infection around the kitchen is to not bring it into the house in the first place. I am a weber guy but, the PK is a quality product a has some nice features. Generally you cook right to left on the PK.

Harry I really like the PK grills. They make a great product that last forever. I wanted to buy one of the the PK360s but they are crazy expensive. I think it might be a good unit for Norah Grace to have For steak cook offs and maybe even to use for 1 or 2 categories at local backyard events. Do you think that it would work for that. She likes to do chicken and pork.

Harry Soo thank you. Do you think it would be big enough to or efficient enough to allow her to cook 2 categories? Again she likes to cook chicken which is a short cook but also pork butts.

I have one myself and you can just drill a tiny hole on the opposite side of the handle to open it and put in your own thermometer. That’s a must. I’m sure it’s amazing to touch a grill that is going but I need my skin. :).

Fun cooker and now I can say have an aluminum grill in my portfolio. Never had one before. I'm ready for SCA steak contests now as the PK are de ri·gueur for SCA comps

It seems that it would be easy to rig up a tray on the bottom instead of those ash channels, to catch the ash, no? It would be much easier to deal with the ashes.

Nice...but for price , reputation,and durability, I prefer the cooking range and dimensions of my 22' and 26' weber kettle ....beautiful PK grill though happy grilling 😁👌

That is why I love the Weber One Touch cleaning system. Grilling on a composite deck in a windy area does not make using the PK a good idea.
