How do you tie it off though? None of these videos show what you do when you finish sewing them into place!

If you're using a new length of yarn, you can tie both ends together (keeping the knot beneath the applique), otherwise you can knot the yarn around a loop of a stitch on the back of the applique. Then just weave in the end by passing it through a few stitches on the back of the applique, or between the two layers if you can't see to do that, then trim off the excess.

Yes, all these techniques can be used with any kind of yarn. (If you're unsure about your fabric glue, I recommended you test your specific glue on a small sample piece made from the same yarn you plan to use before trying it on your larger project!)

does the glue method hold when washing?

If you buy the right glue (washable fabric glue) and follow the washing instructions on the bottle, then yes!

I wouldn't recommend it, for several reasons: hot glue dries hard, not flexible; your finished piece won't be washable; the heat of the glue may damage some types of yarn... Those may not be a problem for your project, and in that case my best advice would be to test the glue on some scrap pieces made from the same yarn and see if you're happy with the result before you use it on your actual project.

For either of the sewing methods, finish by fastening off securely, keeping the knot beneath the edge of the applique, then weave in the yarn end by passing it through the stitches on the back of your applique, so the end is trapped between the applique and the background.
