Top with vegan melty cheese and black olives. We have this every Saturday at church after the sermon. We are 7 day Adventist.

I made this last night and it was so yummy. No clue about what was in their corn salsa, but I just mixed some frozen corn, chopped green onion, a little salsa, chopped tomatoes, and the juice of half a lime and it turned out tasty. I placed it all in the oven except the guacamole which I prefer over having the cold layer. The only problem I had was with making the chips. They mentioned cut in triangles and cook on parchment for 5-8 minutes. Did I hear her correctly because they were still soft? I continued to cook them until they were no longer soft, but then they became teeth-breaking hard. Fortunately I had some blue corn tortilla chips on hand, but of course they were an unhealthy, but oh so delicious, substitute.

I take and dry fry corn tortillas cut into 1/4” squares and let them get brown and crisp. Add a bit of garlic salt (doesn’t take much) becomes a great topping or any place you would adore some crispness. These are delightful on salads and as a topping for baked potatoes or even yams. One could also do this to the tortillias in the Cuisianart Griddler which I use nearly every day.

If you leave the chips in the bowl, and just imagine there are chips on the pan while you add the rest of the ingredients that go in the oven, all the chips will stay crunchy. Long before I adopted a whole food plant based lifestyle, back when I used to eat fast food nachos, I started ordering them with the chips on the side. It worked quite well. I can't stand soggy chips.

I noticed that in all of these recipes on this channel, they are HUGE on lots of veggies, and eating oats everyday But I haven’t seen anything on this channel, or in their books warning against Glyphosate, and how to avoid it. In this country, WHAT DOESN’T CONTAIN GLYPHOSATE ? I love oatmeal, but all brands, especially General Mills, have tested very high in Glyphosate And it’s common knowledge that most vegetables, unless you’re lucky enough to have access to locally grown organic vegetables, are sprayed with Glyphosate and other pesticides.
