We haven't tried to freeze thaw them. If you're planning to freeze/thaw I would recommend not making the casing until you're ready to use because that may not freeze well.

can the emulsified coconut oil be subsituted with mayonnaise? Or is mayonnaise not the right emulsion?

No. Mayonnaise is not the same as coconut oil and will not work. It is also made primarily of eggs, which are not plant-based.

Any saturated fat ie shortening will do. In Uk, they actually have Vegetable Suet which is ready shreaded fat dusted with flour.

We basically just pass on the costs from the carrier for international shipping so there is no way to lower the cost. If you have a cheaper method we are happy to ship products on your account with your preferred carrier.

You can try! We haven't tinkered with combining the 2 recipes since the burger binder is a new ingredient. Let us know how it goes

For the new sausage recipe do I still use the methycellulose HV and also the burger binder or am I replacing the Methycellulose HV with the burger binder?...In other words do I use both or just the burger binder?

We prefer to use the HV for the ground meat mixture and then the burger binder for the sausage. You can use the burger binder in place of HV in the ground meat but we found that it didn't always produce a consistent ground meat mixture when we made many batches of it.
