I used this “egg” substitute mixture in a frittata for dinner tonight and it turned out wonderful. (Poured it over some no oil sautéed onions, peppers, greens and mushrooms- and then baked it right in the fry pan for 6-7 minutes.) Then garnished it with some “cheese” sauce and chopped tomatoes. Definitely a keeper.

I like to soak 2 parts split mung beans to 1 part pumpkin seeds to make omelette. If you added the aquafaba, you could possibly make scramble. I never thought of baking it. I always just sprinkle the black salt after done, as it seems to dissipate when added before.

@@judymiller323 I don't have luck even scrambling mine in granite stone non stick mixing with pumpkin seeds for a little fat. I stick to using it for omelette.

Oh, wow! Thanks! I used to make a veggie omelet with Just Egg and roasted veggies. It was time-consuming and often messy when folded. Your recipe, parchment paper, a pie pan, and pre-roasted veggies and I can have a beautiful hands-off omelet in 7 minutes!

So I just made these for breakfast and they are the best I’ve made so far and I’ve tried these several times. I think the baking powder and cooking them in the oven made the difference. Whenever I would try them in them in the pan they always came out all balled up and just not appetizing. Thank you so much for sharing this recipe ❤️

Thanks for this! I was never a big fan of the chickpea flour omlette. Being too lazy to go to an Asian or Indian grocery, I tried yellow split peas instead and it was pretty respectable; especially with the black salt after cooking. I also tried cooking stove top; big fail. Even with a [cheap] non stick pan, and even with a good film of oil it wouldn't come off. Baking is MUCH better and quick. This is a keeper; thanks again!

Thank you, thank you, thank you so much for this oil free version! I tried other vegan KZbinrs' recipes out but they all contained oil, and my attempt without oil in a pan failed miserably. Finally, an easy way to get the right firmness and texture without a sticky mess to scrub afterwards. 🙏❤💗

If you have an Indian grocery store in your area, they have every type of bean imaginable at very good prices.

I just tried this with yellow split peas, and it was pretty respectable, especially with the black salt on the top after cooking [the flavor dissipates with heat] I'd like to compare it to mung beans, but honest, I'm pretty happy with the yellow split peas.

I am going to try this. I used to use Follow Your Heart powdered egg, but they stopped making it. I don't like the liquid Just Egg, but I have been buying the frozen Just Egg and it is 4 pieces for $4.09. This looks just like the frozen Just Egg. I bet I could make this cut it into sections and fold it, then freeze it to take out for breakfast in the morning.

OH MY! We just made breakfast Taco's! We make our own corn tortillas, so much better than store bought. The combination of homemade Huevos Taco's was mind blowing. We are making Huevos Enchiladas tonight! Now we can make Egg Fried Rice.

I have been making mung bean eggs and pepita eggs for sometime now, but I like the idea of adding aquafaba to the mix. Also a great idea with the oven. Thanks

I have tried this substitution and it doesn't work very well. The final cooked product had a strong taste of raw, dried beans. The split yellow peas do not ferment overnight in the same way split mung beans do. It seemed like the peas lacked the "oomph" of the overnight mung beans. I can't remember the difference in consistency, if there was one. What I mostly remember is that "raw bean" taste of the peas. 🤢

I tried a mung dal omelette by Vegan Richa. The taste was great. The only problem is that a very good non stick pan is needed. I like the idea of baking it in the oven.

I've just recently just tried JustEgg. I mix it with chickpea flour and make it into a omelette with veggies. But it always sticks to the pan! This is a great alternative!

Another KZbinr mixed it with tofu which helps reduce the cost per serving. I love the frozen version of Just Egg and put them directly into the toaster. I’ve made a lentil version with veg to make an omelette version which is good. Can’t wait to try this healthy version!

Firts, let me say that I love your channel, have followed you for several years and I am a supporting member. In regards to this recipe; being very texture sensitive, and having trouble with several wfpb meat/egg substitutes, I found this dish to be much like a sticky, under-done pancake and I couldn't finish them. The flavor was pretty good, I just couldn't get past the texture in my mouth. Possibly I can cook/bake it longer to make it drier (not so 'stick to the pancake turner') so it will cut up easier and be less dense pancake-like?

You can also skip the blending step and use “basin” a chick pea flour you can get from Indian grocery store..!! Same flavoring ingredients and voila…!! Same results

I couldn’t find split yellow king brand anywhere (didn’t shop online). I ended up buying whole mung beans and I seem to recall they looked more green than yellow. Haven’t tried it yet - green eggs and ham! Going to find them in my cupboard and try anyway. I’ll add turmeric )and pepper) to amp up the yolk colour.

Hi, thank you for these videos, I'm very interested in oil free recipes. I'd love to know what was on the toast! I have been vegetarian since my 20s, I'm 68 now, and have been plant based/vegan for over 10 years. I have a lot of health problems, and despite my diet I'm overweight. The only thing left to give up is oil/ spread. (I used olive and avocado oils) I love toast, and although I don't eat lots, I'll miss it, as I've no idea what to put on it without spread 🤦‍♀️Any ideas would be most welcome. I'm fairly new to you channel, but hope to get many recipes from here😊

what kind of beans are you using? you have them in yellow, but in our stores with that name they are green. on Wikipedia they are called the mung bean (Vigna radiata), alternatively known as the green gram, maash (Persian: ماش٫ Kurdish: ماش)٫ mūng[2] (Hindi: मूंग), monggo, or munggo (Philippines). Are they the same beans or not?

This is great, thank you! 🎉 I love Just Eggs and never thought to try to make a home-made version. I am looking forward to trying this. Also, fully resonating about letting eggs go as one of my hardest parts of going plant based (though so relieved to not eat them now). Love this alternative!

I made a recipe like this but with only shelf stable ingredients. After I dried the mixture and than processed it into a powder. To use it I mix with some water + black salt and let sit for 20 minutes. It’s basically a shelf stable instant no egg powder 😊

That sounds interesting. I have a couple of Jill's soups in my freezer right now. I make big batches in an InstantPot and freeze most of it in Pyrex. I sort-of live off Jills recipes. If you have any specifics of the mods you made, I'd be interested to hear them.

3-4 inches above the dried beans. If there is any left after soaking, just pour it out.

mung dal ('dal' means 'split') - ie it isn't the whole green mung bean.

Aw my I was hoping to find an egg recipe without Just Eggs. I've used it for awhile with my son and when he started backing off from it I flipped the bottle over only to realize the ingredients have changed. :-( I stopped using it. Also heard that the were recently bought by another company thats into making a lot of questionable meats..so IDK

After you wrote this comment, i looked up, "Does Just Egg test on animals?"...And the article said that they needed to feed some rats the mung beans without harming them, and examine their poop or something, so the FDA can give them the go-ahead to start "Just Egg"...It sounds like it's a requirement or something...?...So strange...That seems ridiculous as well, since rats won't be eating Just Egg, but humans will, so why not test mung beans with humans..?...But they do share their equipment with real eggs...It says that on the frozen package, and i called them about that, and they said eventually they will get different equipment, but who knows...☀
