Just to clarify, you're looking for split mung beans! I was hella confused because I'm like "I have mung beans, they are green??" but those are the whole ones (the ones that can be grown into big beans sprouts!). These yellow ones have been skinned and split. Green ones won't work for this recipe!

Thar's very interesting. I haven't tried to use the green lentils but always just purchased the yellow moong dal (mung dal). Apparently "dal" translated means lentil but it actually refers to a bean or lentil or legume that has been split. So, maybe this is where the confusion lies.

@@buzz10014 They are processed to remove their skin and I believe they are also somewhat cooked. It's the same as how blending dried green peas won't give the same results as split peas even if they came from the same plant. No harm in trying it though of course, feel free to report back with your results!

Try frying up some cooked chickpeas, then mash with water or plant milk, just before serving season with volcanic salt, some chopped herbs and nutritional yeast. Sooo good and healthy

Well, not that you're going to see this comment, but I think this mixture might do better if the mung beans get soaked twice to get as much of the starches out, then adding a little more liquid so that when it hits the hot pan, you can use the moisture evaporation to make it more.... well like justegg. Justegg is expensive because they use mung bean protein isolate, plus binders.

Candice I just made this and it turned out A M A Z I N G! One of the best omelets I’ve ever tasted, vegan or no. I didn’t have many leftovers in the fridge for filling but I did find some bell peppers, onions and vegan bacon. Oh and cheese sauce, so important. Thanks for the recipe as I wasn’t particularly motivated to cook but everything worked out perfectly. Next: anyone interested in washing some dishes?

Ok, so I just made this. I'm sure most of you know this, but one cup of dry mung beans expands when soaked in water overnight. Mine about doubled. So I rinsed them and instead of dumping the entire amount into my VitaMix, I added one heaping cup as she does in the video. So perhaps the recipe should read 1/2 cup dry mung beans, soaked overnight to make one cup. After blending, the mixture looked smooth and thin as the recipe states. I cooked some in a non-stick pan (sprayed with Pam) and frankly, I thought the texture was a bit cakey - like a thin pancake. Maybe it's the addition of baking powder. But I didn't care for it. Luckily there are lots of recipes out there using yellow mung beans, so I will have a use for the remaining amount I got from Amazon 😄

Mark from Sauce Stache has made a mung bean based egg quite some time already and he was rather happy with the results too :) I really have to finally try it out as sometimes I do miss that more fluffy but still smooth texture you won't get from tofu. After I soaked them, it seemed like it was expanded to way more than a cup!!!… But then when I watched your recipe again … It seemed like you truly use just a cup when you put it in the blender. Girl, you are KILLIN' IT with these vegan recipes!!! I just tried this "Just Egg-Style" vegan egg replacement and I have to say, WOW! I did cook my "scrambled eggs" in vegan butter (and I definitely recommend cooking it in vegan butter or some kind of oil, because I tried it without and it did NOT turn out the same way) and while it came together very different than eggs would, in the end, they came out really good, and I think I like them even BETTER than Scrambled eggs! I could eat a plate of these just by themselves (and I did! lol), but they're also great in a breakfast burrito with vegan cheese, spinach, avocado, etc. I'm so glad I found this and I will be making it often! Thanks for sharing another great recipe and have a great weekend!! =D

I picked up a bag of mung bean powder from the Asian store. also I made it To recipe And made and omelette and scramble then I added a bit of tofu to the mixture and blended it and made another omelette and scramble. I preferred the texture and taste to the one with tofu added.

Hi! Love your channel. I made this today. It is really good. I suggest a clarification for the written recipe. Please note that you measure the mung beans after they have been soaked. You begin with saying soaking 1 cup. That will result in about 2 cups after they are soaked. You show using one cup soaked, but the recipe does not clarify that. You may even want to say to soak 1/2 cup of beans for the recipe. Either way, it will help. I also made this without oil, and it was fine.

OMG! Mung beans are yellow lentils? I never realized. Even if they aren't I will be using this recipe for sure! I have bought the "Just Egg" product 3 times and tossed it out all 3 times because it goes bad and I forget about it. This is great news that I can use yellow split lentils to make this stuff. I just made this and it turned out red when I did an 8inch omlette in a pan. Why would it look yellow pouring in and turn red when cooked?? Still tastes good but mine was pretty thick...I'm thinking less baking powder when I make it next time..also am thinking of trying oat milk powder + water to hopefully keep costs down. Plant milk is pretty expensive and I never use it all before going bad.

Haven't got Just Egg yet but they are planning to launch it in Europe( they are referring to Europe the continent not the EU because they are two separate things) sometime during this summer it could of been launched by now or will be soon. The UK is still part of the European continent.

Mine turned out the same in the vitamix. It’s insanely thick and became bean paste. So I don’t think this is correct. There must be something wrong cuz it will work for pancakes but not scramble it’s way too much like batter

tried this recipe this morning, and we were very pleased. JUST EGG is so expensive, i just might have committed to making this every week or so. wish i could post a photo of my cheez and spinach omelet!

I didn’t know yellow lentils were mung beans. I’ve always seen the green mung beans or sprouted mung beans. I actually just got some Just Egg and it didn’t seem to agree with the lower intestines and I thought it was the mung beans yet I eat yellow lentils without issue, which tells me it’s something else. Learning new things every day.

Mung beans are actually different from yellow lentils. It's confusing because split mung beans are sometimes called yellow mung dal/yellow mung lentils

Made this and it turned out so good. So easy and economical. I left out the garlic powder because I want to use it in crepes and other baked gods as an egg substitute.
