Just to clarify, you're looking for split mung beans! I was hella confused because I'm like "I have mung beans, they are green??" but those are the whole ones (the ones that can be grown into big beans sprouts!). These yellow ones have been skinned and split. Green ones won't work for this recipe!

Thar's very interesting. I haven't tried to use the green lentils but always just purchased the yellow moong dal (mung dal). Apparently "dal" translated means lentil but it actually refers to a bean or lentil or legume that has been split. So, maybe this is where the confusion lies.

i dont see how split mung bean would be different from non split mung bean when you blend them. but the recipe looks amazing and great video!

@@buzz10014 They are processed to remove their skin and I believe they are also somewhat cooked. It's the same as how blending dried green peas won't give the same results as split peas even if they came from the same plant. No harm in trying it though of course, feel free to report back with your results!

I legit eat JustEgg every morning for breakfast. I hate that it’s so expensive, that it comes in plastic bottles and that it’s got a lot of sodium. This recipe could be life changing for me. I’m so excited to try it out!

Try frying up some cooked chickpeas, then mash with water or plant milk, just before serving season with volcanic salt, some chopped herbs and nutritional yeast. Sooo good and healthy

If the taste/texture are not quite what you expected you could try mixing 50%/50%. I do that sometimes with Beyond Burger.

This recipe changed my life! I keep a squeeze bottle full of this in my fridge at all times now. I bought an omelette pan and I make a vegan "omelette" most days of the week now. I'm so glad she did this!

Well, not that you're going to see this comment, but I think this mixture might do better if the mung beans get soaked twice to get as much of the starches out, then adding a little more liquid so that when it hits the hot pan, you can use the moisture evaporation to make it more.... well like justegg. Justegg is expensive because they use mung bean protein isolate, plus binders.

I have been a fan of your recipes since the beginning! Many many thanks for disclosing the ingredients behind that expensive product! I am planning to make this two weeks! I am 73 years old and have been vegan for 25 years. I have missed eggs but now I can make my own circumventing the chicken entirely! Your recipes are delicious by the way!

Candice I just made this and it turned out A M A Z I N G! One of the best omelets I’ve ever tasted, vegan or no. I didn’t have many leftovers in the fridge for filling but I did find some bell peppers, onions and vegan bacon. Oh and cheese sauce, so important. Thanks for the recipe as I wasn’t particularly motivated to cook but everything worked out perfectly. Next: anyone interested in washing some dishes?

@@bhappy8892 did you use golden lentils? It came out right with those in the other ingredients. It does take a few minutes to cook. Good luck!

@@judithfinelli6916 no I didn’t use golden lentils. I meant I used the store bought Just Egg and that took at least 20/30 mins to firm up. I am very familiar with Mung beans, we call it mung dal which is a staple as a side dish in Pakistan. I was actually waiting for Edgy Veg’s response before I make this. Hint, hint Edgy Veg. 😊

Just made the transition and have seen many mung bean/yellow lentil hack videos for eggs and yours looks the most appetizing. I never thought I would miss eggs so much since I stopped eating them!

Ok, so I just made this. I'm sure most of you know this, but one cup of dry mung beans expands when soaked in water overnight. Mine about doubled. So I rinsed them and instead of dumping the entire amount into my VitaMix, I added one heaping cup as she does in the video. So perhaps the recipe should read 1/2 cup dry mung beans, soaked overnight to make one cup. After blending, the mixture looked smooth and thin as the recipe states. I cooked some in a non-stick pan (sprayed with Pam) and frankly, I thought the texture was a bit cakey - like a thin pancake. Maybe it's the addition of baking powder. But I didn't care for it. Luckily there are lots of recipes out there using yellow mung beans, so I will have a use for the remaining amount I got from Amazon 😄

Mark from Sauce Stache has made a mung bean based egg quite some time already and he was rather happy with the results too :) I really have to finally try it out as sometimes I do miss that more fluffy but still smooth texture you won't get from tofu. @@EdgyVeg Hi!! Love your videos. I just made the mung bean, “just egg” Mixture. It was pretty pretty pretty damn good! I’m a little confused though with the cup of mung beans. After I soaked them, it seemed like it was expanded to way more than a cup!!!… But then when I watched your recipe again … It seemed like you truly use just a cup when you put it in the blender. I put in the entire expanded little container that I soaked them in! After I drained them of course! Did I do that right?? Does this make sense?!

This is amazing stuff. There are three vegans in our house and ever since this video came out we have had these omelets on all of our days off. I love the fact that you can make it up ahead of time to store in the refrigerator. Then just chop up your veggies and I make vegan cheese and it is so good. Do you think it would work in sweet dishes if you took out the onion and garlic? I'd love to use it for something like french toast or crepes, which I like to eat with sweet toppings rather than savoury.

Girl, you are KILLIN' IT with these vegan recipes!!! I just tried this "Just Egg-Style" vegan egg replacement and I have to say, WOW! I did cook my "scrambled eggs" in vegan butter (and I definitely recommend cooking it in vegan butter or some kind of oil, because I tried it without and it did NOT turn out the same way) and while it came together very different than eggs would, in the end, they came out really good, and I think I like them even BETTER than Scrambled eggs! I could eat a plate of these just by themselves (and I did! lol), but they're also great in a breakfast burrito with vegan cheese, spinach, avocado, etc. I'm so glad I found this and I will be making it often! Thanks for sharing another great recipe and have a great weekend!! =D

I picked up a bag of mung bean powder from the Asian store. also I made it To recipe And made and omelette and scramble then I added a bit of tofu to the mixture and blended it and made another omelette and scramble. I preferred the texture and taste to the one with tofu added.

Hi Candice, LOVE your work. Could you please clarify, is it one cup mung beans before or after soaking?. Mine was VERY thick and tasted 'beanie' and I wondered if it is because I put in all the soaked beans (about 2 1/2 cups once soaked)

Hi! Love your channel. I made this today. It is really good. I suggest a clarification for the written recipe. Please note that you measure the mung beans after they have been soaked. You begin with saying soaking 1 cup. That will result in about 2 cups after they are soaked. You show using one cup soaked, but the recipe does not clarify that. You may even want to say to soak 1/2 cup of beans for the recipe. Either way, it will help. I also made this without oil, and it was fine.

Can you use moong dah or chick pea flour vs dried beans? Wondering if you could make your own just egg bottle and freeze in batches? I have frozen Just egg liquid and it freezes well. Would think you could do with a homemade mix too?

OMG! Mung beans are yellow lentils? I never realized. Even if they aren't I will be using this recipe for sure! I have bought the "Just Egg" product 3 times and tossed it out all 3 times because it goes bad and I forget about it. This is great news that I can use yellow split lentils to make this stuff. I will admit, I DO miss my over-easy eggs 😥 but I am healthier, so the trade off is worth it! Thanks for sharing 😊👍💖

I just made this and it turned out red when I did an 8inch omlette in a pan. Why would it look yellow pouring in and turn red when cooked?? Still tastes good but mine was pretty thick...I'm thinking less baking powder when I make it next time..also am thinking of trying oat milk powder + water to hopefully keep costs down. Plant milk is pretty expensive and I never use it all before going bad.

Haven't got Just Egg yet but they are planning to launch it in Europe( they are referring to Europe the continent not the EU because they are two separate things) sometime during this summer it could of been launched by now or will be soon. The UK is still part of the European continent.

Edgy veg, need another clarification please. I am guessing you used 1 cup of mung beans after they were soaked overnight. So how much dry mung = 1 cup of soaked ones. They expand quite a bit. Please reply back soon, ready to give it a try.

I haven’t found one that I like yet but I did love eggs so maybe I’m being too picky, this scrambled eggs version looks revolting but I think I’m gonna give it a try as it’s not always what it looks like

I tried making these and when I made the scrambled version, they kind of just ended up looking like mashed up beans LOL. Do you think it would have come out better if it was a smoother batter? I don’t have a great blender

the same thing just happened to me! i feel like if i added some water or more milk it would have helped smooth out the consistency a little more. the taste is definitely there but the texture is throwing me off!

Mine turned out the same in the vitamix. It’s insanely thick and became bean paste. So I don’t think this is correct. There must be something wrong cuz it will work for pancakes but not scramble it’s way too much like batter

I love Just Egg but since we moved there’s no stores near us that sell it 😭 I’ve been vegan for like 5 years and allergic to chicken eggs so this recipe is perfect for me! I can’t wait to try 🖤

I get mine at an Indian grocer, they call it mung (or moong) dal. Aside from vegan eggs, it's also very good for making dal curries.

I didn’t know yellow lentils were mung beans. I’ve always seen the green mung beans or sprouted mung beans. I actually just got some Just Egg and it didn’t seem to agree with the lower intestines and I thought it was the mung beans yet I eat yellow lentils without issue, which tells me it’s something else. Learning new things every day.

Mung beans are actually different from yellow lentils. It's confusing because split mung beans are sometimes called yellow mung dal/yellow mung lentils

Made this and it turned out so good. So easy and economical. I left out the garlic powder because I want to use it in crepes and other baked gods as an egg substitute.
