Ripe plantain veggies mince lasagne
Yield:
2 large ripe plantains,sliced and fried
1cup mozzarella cheese
1cup sharp cheddar
1 pepper Jack cheese
Filling
2cups veggie mince,soaked
2 tbsp vegetable oil
1 onion ,diced
1 bell pepper,diced
1large tomato, diced
1 medium carrot 🥕,shredded
1 tbsp all purpose seasoning
2tsp garlic powder
1 tsp thyme leaves
11/cup ketchup
Procedure
1. Heat oil in a sauté pan. Add diced onion,bell pepper,diced tomato,shredded carrot,garlic powder thyme, and all purpose seasoning . Sautéed from 2 minutes.
2. Add soaked veggie mince and ketchup. Stir to combine . Sauté for 2 minutes more . Remove from heat and set aside to cool b.
3. Assemble plantain lasagna by layering plantain, cheeses and veggie mince alternately. Cove plantain lasagna with foil. Bake at 350F for 20 to 39 minutes .
4. Remove from over and enjoy
