I am so grateful that you shared these ideas. I just started my plant based journey two months ago and I was struggling on ideas to create healthier versions of some of our favorite desserts to take to share with family. And just a side note, I made the roughened fries with dinner last night from your cookbook and they are SO GOOD- even hubby approved! I'm reall old school, and have never baked with any other apple other than Northern Spy and the Cortland. Those two are what I grew up learning made the best pies. I've tried Granny Smith, but they remain a little too crisp for us ever after baking. How do the Honeycrisp bake up? Soft and yummy; or do they still have a crunch? My husband and I don't like our baked apples to have a crunch. The Spy and Cortland are only available in season. So, I'd like to find a baking apple that might cook down a little more than the Granny Smith. That apple crisp looked really delicious.
