Blows my mind that some guys need water to get a smooth finish. Here’s a tip bro - mix the pointing up so fluffy you don’t need the water. Then polish your trowel up really smooth,

Looks like you stuck the new mortar on top of old mortar, which isn't the way to do it

The mortar he is using has a flexible rubbery compound, it prevents cracking and designed to go over the old bedding mortar. I am in the process of doing my roof the same way. There are a number of brands available, looks like he is using Dunlop repointing. Hope this helps.

Weep holes hard to see but are there in the right side of the pan.Poked holes through the pointing after half set.
