Polenta is one food that always taskes me back to my childhood. Corn is a food from the New World-it only came to Italy after the discovery of the Americas. But you could never tell the people from the region of Friuli-Venezia-Giulia, the region I hail from, that polenta is not Friulian. So much so that the Friulianos are called polentoni, polenta eaters, much like the Tuscans are called mangia fagioli, beans eaters. This dish is a delicious combination three classic ingredients, that's also the epitome of comfort food. My Mom would put the leftover polenta on a sheet pan and refrigerate. The next morning she would cut it in bread slice size sections. Then make French toast. Eggs, milk, cinnamon, sugar, vanilla and a smidge of nutmeg. Dip each slice in the mixture and into a fry pan with butter. Cook until the egg is done and lightly brown. Serve with crispy bacon and maple syrup. My grandparents were from Calabria, where the family would sit around the table. Grandma has a huge wooden board similar to a cutting board, and she’d lay it in front of everyone. The she’d pour the polenta onto the board in front of everyone. Topped it with homemade tomato sauce with beef and pork, then top it with grated cheese. Everyone had a spoon and ate from the board. Italian families are about food, tradition and the kitchen (indoor and outdoor) table. The kitchen table is the heart of the family. It where we share food, our day, our family. It’s sad that younger generations don’t have this in the home.

My nonno from Italy,always had a copper pot and a big wooden stick and said you have to constantly stir and was great next day fried with cheese

Leftovers are the best! Next day polenta cakes, arancini from day old risotto, pasta frittata etc. I love them all.
